Two years of cuckoo brewing at a friends brewery (thank you Mr. Bob) and sales in London led to two big life changes; Time to find a home for Inkspot.
Finding a barn sheltered within the Rookery garden, a conservation area on Streatham Common, was incredible. Overwhelming local support for the brewery project led to planning permission being granted & three years of work transforming a tired barn into a working brewery.
The Rookery is such a local treasure, every step of the project had to be carefully considered & sympathetically delivered. It was no easy task, but we have finally completed and Inkspot beer is in the tanks.

Bottle shared at Leightons place. Thanks to Paul. Clear light brown coloured pour with a halo of grayish head. Aroma is earthy wood, strawberry, dusty, manure. Flavour is composed of ashy, burnt wood, tangy berry, sweet fruit. Palate is medium sweet, moderate carbonation, Lingering burnt toast and dusty. Ok effort.

Bottle shared in London - many thanks to Daniel. Pours clear reddish brown with a creamy tan head. The nose has a bit of tobacco, leaves, dry bread. Light sweet flavor with some ashy roast, minerals, cigarettes, burnt leaves. Light bodied with fine carbonation. Lightly sweet on the finish with more smoke, cigarettes, leaves. Not good.

Bottle thanks to Leighton. It pours deepest brown with minimal beige head. The nose is sweet, candy, raisin, dried cranberry, caramel and earth. The taste is smooth, caramel, toast, berry, dried fruits, roasted malts and mild acidity with a short, dry finish. Medium body and fine carbonation. OK.

Bottle from the Joint. Pours completely clear gold, lightly effervescent, with a creamy white head that quickly fades out. The aroma holds notes of sugary cereal, bread, some off phenolics, light smoke, crackers. Medium sweet flavor, sugary and a little oily, with more crackers and cereal, hints of candied ham, light caramel, white bread, minimal bitterness. Light bodied with fine to average carbonation. Sugary sweet finish with a bit of butterscotch, subtle smoke, more honey and caramel, simple bread, barely any hops. A few flaws here.

Bottle from BOB Wines, C. Palace. It pours clear amber with medium, foamy white head. The nose is toasty, brown bread, biscuit, earthy hops and marshmallow. The taste is bitter, woody, resinous, leather, floral, pithy citrus, pepper, brioche and earth with a pretty dry finish. Medium body and moderate not exactly an IPA, more like a highly hopped ESB or sumtin. Solid stuff anyhow.
