10 ounce at Aurora Arts - hazy medium gold - nose is lovely oak, light funk, mild lacto and acetobacter - flavor is drying acidity, but not overly sour or acidic - nice balance - bright lacto leads to light acetic acid in the finish - white grape, oak, white peach - light buggy funk - lingering oak and acid in the finish - quite nice.

This location is not too far from where I live, so I will often go here on the way home from work - much larger space than the original brewery further west on Colfax - long wall of coolers for to-go beer, including a good assortment in cans and a handful of higher abv bottles - usually you can get roughly 50% of what is on tap in cans to-go - similar selection to the other location, but this one most of the time has more of the high gravity and barrel-aged beers on draft than the other, so consider that when deciding which location to visit - for a while, they struck a decent balance of foeder lagers, ipas, wild ales, and high abv stuff - however, more and more often you'll see anything that is not an ipa getting a little squeezed out - they still have everything else, but often a smaller assortment than they used to - service is usually good, but they have a handful of people on staff who are a little gruff sometimes - they have a lot of pinball machines and a shuffleboard table - inviting to kids, so that gives them something to do - this is also one of those places that lets dogs inside even though it is against health code, but that's like 90% of breweries in Denver, so fuck me, I guess - anyway, I am a big fan of Cerebral and the proximity will keep me coming back, but I've been less impressed over the last year or so - I hope that turns around - I'd say if you are choosing between locations to visit, here are considerations - this one usually has more of the barrel-aged stouts on tap - but this one is in a shittier neighborhood that is father away from the other area beer locations - they have also just opened a location in the Highlands neighborhood, so I will check that one out soon.

Pint can - clear dark gold with a pretty substantial head - decent texture in the mouth, with soft carbonation - the flavor, though, is soggy cereal grains, light corn syrup sweetness in the back, moderate indistinct hop bitterness - watery, limp finish, with some lingering sweetness and an odd note of postage stamp glue - it's not good.

Pint can picked up from the brewery today - I think I need to come to terms with the fact that this brewery doesn’t make good ipas that aren’t hazy - this is both too sweet and not bitter enough for the style - that hop character and bitterness really try to break through in the finish, but it is not enough.

Pint can - dark amber pour with a thick off-white lace - super rich caramelized maltiness on the approach, leading to dark fruit (raisin, plum), dark bread, light spice - lightly warming finish with a touch of tamarind and lingering caramelized sugar - it’s really nice!

Can - this beer tastes like vanilla extract poured into day-old coffee, which is not as bad as you think, but still not great - it has a creamy texture and well-masked alcohol, but it’s not very tasty.
