100% spontaneously fermented beer inspired by authentic Belgian Lambic & Gueuze. We chill the unfermented beer overnight in our coolship and allow native yeast to work its magic. A true reflection of Texas terroir.

Poured from 750mL bottle (blended Feb 12, 2018) @ July Black Xmas. Hazy gold with small white head. Funk and wood, good balance, quite nice. Probably one of my favourite Jester Kings.

25 March 2023. At Innis & Gunn, Edinburgh. Shared with the lovely Anke!
Vintage 2022. Hazy orange, small, white head. Aroma of unripe apricot, plum, grape, ripe peach, blood orange, vinegar, oak, leather, cellar. Taste has sour apricot, peach & grape, funky vinegar & wet wood. Very tart finish with funky stone fruit, leather & wood. Medium body, moussy texture, average carbonation. Very pleasant surprise to find this here; lovely funky stuff.

Keg draught at the Rutland Arms, Sheffield. 2022 Vintage. Dark gold, little bit of haze with little to no head. Farmyard notes, earwax, sweet cooking spice, ripe tangerine. There's a sweetness to the taste that's unusual for a lambic.sourness I the finish with an almost floral fruitiness in the aftertaste. Top, top stuff.

A little extra tartness than expected but jester king still got a great gueuze attempt here, the nose is great rustic funk and upfront it's delicious, just a lingering tartness and acidity.
