From the tradition started by the monks of St. Francis of Paula in 1634 comes this warming beer of rich heritage. A dark, rich lager of sublime complexity and character, St. Victorious is created from multiple German malts. Laborious decoction mashing yields the choicest elements of the malt. Long, cold aging mellows the strong temperament of this subtle beer. Celebrate the end of winter with a warming draft of St. Victorious Doppelbock!

12 oz bottle. Poured into a mug. A somewhat clear amber in color. Medium carbonation. Sweet malt in the nose, lots of malt in the taste. A very light hop in the finish. Body is much thinner then the German varieties. A good beer by a American brewery however, not as superior as the true German brews of the style. You do not taste the alcohol as it states that it is 7.9% ABV.

Sample at Duke’s Alehouse & Kitchen in Crystal Lake, IL. The beer is a reddish-brown color with a medium thin tan head that dissipates slowly. Rings of lacing on the glass. Aroma of sweet malt and toffee plus some fruit. Medium body with flavors of malt, dark fruit and a touch of hops. The finish is sweet with a lingering dark fruity aftertaste. Above average overall.

not my fav style to be sure, way too malty sweetness. the first few sips are ok, but a tough one to finish when it gets a little warm. strips the mouth a little, the taste is again, malts, and some wheat or grass lagerness. not terrible but wont be doing it again. One of Michael Jacksons 500 classic brews.

Draught, 7.8%. Sweetish fruity aroma. Cloudy dark red brown colour. Unstable head. The flavour is fruity at first. Turns nicely sweet with a hint of alcohol to balance. Good, sweet dark fruits. Spicy, almost herbal hop flavour. Clean finish. Better than many German Doppelbocks.

Bottle: Poured a medium brown color ale with a large off-white foamy head with good retention and minimal lacing. Aroma of caramel malt and light toffee is enjoyable though not necessarily what I was expecting from a doppelbock. Taste is also dominated by sweet caramel malt notes with light toffee notes as well. Some notes of banana bread would have complemented well this beer. Body is about average with good carbonation and no apparent alcohol. Well done though lacking usual ester.

A reddish copper bock with a thick moka head. A sweet caramel aroma, light vanilla, light boiled veggies. In mouth, a grainy sweet mashed malt, light, like unfermented worth, a bit cloying. Medium bodied. On tap at Afterwords Café, Feb. 2010.

Draft at Birreria Paradiso in DC. Sweet nutty malt aroma. Deep amber stained-glass color. Rich and sweet, malty. Excellent example of an American Bock beer. Rich, with lots of fruity yeast nuances. Excellent. Props to Victory.

Clear deep coloured body with a super thin light tan head. Aroma of malt, grapes, nuts, caramel and raisins. Medium-bodied; Strong taste of malt, pit fruits and nuts in the taste - a good taste for the style. Aftertaste shows malt and alcohol, no fruits or sweetness. Overall, a damn good beer - definitely representative of the style.
