One of the most complex beers we’ve ever attempted. A blend of two barrel-aged imperial saisons – one black, one red – which has in turn then been aged in rum barrels, it is an enormous, intricate beer.
A baseline of warm, smoky raisin and plum, followed by punchy flavour elements coming to the fore – coconut, mint and blackcurrant. There’s a long undercurrent of treacle toffee, before the finish darkens to liquorice, star anise amidst a touch of honey sweetness.
Malts: Cara, Carafa, Crystal, Extra Pale, Flaked Oats, Wheat
Hop: Mount Hood

Draft at Brewdog Brussels. Pours dark brown with a ring beige head. Aroma of caramel, huge floral notes, perfume, dark fruits, rum, sweet malts and toffee. Flavour is heavy sweet and moderate bitter. Medium to full bodied with soft carbonation.

375ml bottle @ Chez Sophie, Shrewsbury. Pours dark brown with thin tan head. Aroma is cocoa, treacle, coconut, menthol. Mouthfeel is smooth, oily. Initial cocoa and treacle, with a wave of coconut, banoffee pie, vanilla, mint and red wine on the finish with a little honey to see you off. Complex, layered, fascinating beer.

Thank you! Sampled draft @ BrewDog Brussels. Very dark amber. Nose is huge booze, lots of oak, barrel, vanilla & apparently rum, very spirit-heavy, syrupy, touch warming wine. Taste is huge vanilla, oak, spirit (rum – picked it for bourbon, shows what I know), syrupy, mocha, licorice, warming, thick sugar, dash red wine, berries, stone fruit, chocolate, raisin, coffee, dark berries,… Warming, syrupy,… Great big barrel character, great if you are not paying for it. Saison? Even by todays insanely wide standards for the style that is really stretching it.

Tap at BrewDog Helsinki. Opaque color, steady beige head. Roasted, cocoa, berries in the nose. Medium-bodied to full-bodied. Sweet, berryish, toasted and sherryish notes. Some hops in the finish. Chocolate cake too. Not a Saison but good.

Keg at Bottle Shop - Bermondsey. Cheers, Matteo! Pours clear, dark brown with a frothy beige head. Dynamic aroma, some dark malts, caramel, tangy dark berries, nips of cocoa, burnt toffee. Medium to heavy sweet flavor with some oily vanilla, raisins, cocoa, barrel, mild earth, a little smoke, earth. Full bodied with average carbonation. Quite warming on the finish, with more vanilla, baking cocoa, some burnt wood, toasted coconut, candi sugar, vague saison yeast, puréed berries, faint cinnamon, more raisins, figs. Wow, this is decadent, indulgent stuff. Calling it a ’saison’ is certainly a stupendous stretch, but whatever you call it, it is delicious.
