Our dream begins with open-top fermentation. At high krausen, a foamy, rocky yeast head crests the sides of the fermenter releasing notes of black pepper and spicy clove. Unfiltered and cloudy with yeast, it’s slightly tart and downright refreshing.

Drought. Tasted on 20 March 2013. Hazy yellow appearance, off-white creamy head with good retention, doughy aroma, low carbonation, orange peel aroma, abrupt finish. Smooth but not remarkable hefeweizen.

Bottle. Pours clear golden light amber with a small white head and minimal lacing. Aroma is banana, lemon, wheat. Flavor is about the same with a touch of clove and a citric backbone. Medium body. Quite nice for a wheat beer.

Bottle. Banana, clove, and wheat aroma. Slightly hazy golden with a moderate white head with little to no retention. Banana, wheat, and clove flavor. The spice finished a little bitter. Medium body, moderate carbonation.

Bottle. Banana, clove, and wheat malt aroma. Cloudy golden yellow with moderate head. Mildly sweet banana-orange, light clove, and wheat malt flavor. A great weizen.

Cloudy muddy light amber beer, small aery white head, unstable, dissipates quite fast. Aroma: banana peel, yeasty, bit muddy. MF: very little carbon, medium to full body. Taste: banana start, peppery, some other spices, green banana peel. Aftertaste: more banana, they sure got the right yeast. I wouldn't call it just a "hint" of banana. But it's a pretty ok beer!

Draft @ the brewery. Pours a hazy yellow color with a white head. Has a fruity wheat malty aroma with hints of banana. Sweetish wheat malty spicy banana flavor. Has a sweetish wheat malty spicy banana finish.

Bottle. Cloudy, deep golden body with a fizzy, off-white head that is rapdily diminishing. Aroma of toasted grain, floral hops and wheat. The flavor is moderately sweet and lightly bitter. It finishes lightly to moderately sweet and lightly to moderately bitter. Some pleasant tartness, characteristic of hefes, creeps into the finish. Medium body, watery texture, lively carbonation. A hint of orange in the taste. This is an OK wheat beer, but not much of a hefe.

great color and aroma that are both very enticing. the only thing left to be desired about this one is the carbonation, a little heavy for a hefeweizen, unlike most actual german hefe’s like schneider or ayinger, this is overly carbonated which kills the subtleties in the flavor like the banana and floral notes, a little citrusy zing to it as well. really delicious, will love this one after a round of golf in july, and maybe some on the course as well.

Draft at Paradiso Georgetown. Very murky yellow, solid white head with a curtain of lace. Aroma of huge lemon and bubblegum. Taste has sour lemon, grapefruit, pineapple. Nice stuff.

Bottle from Half Time. Pours hazy gold with a foamy white head. Strong aromas of bananas and yeast/spice. Near med body. Flavor is more than a slight hint of banana, and there’s pepper and spice and something fruity that’s not banana. Amazing hefe.
