Our recipe was inspired by the traditional refectory ales known as patersbier (“fathers’ beer” in Flemish) in Belgium. These sessionable beers are brewed by the monks for their dinner table and are typically only available at the monastery. Spencer is a full-bodied, golden-hued ale with fruity accents, a dry finish and light hop bitterness. The beer is unfiltered and unpasteurized, preserving live yeast that naturally carbonates the beer in the bottle and keg and contributes to the beer flavor and aroma.

Pours hazy amber with a thin white head. Aroma of ferrous herbal malt. Taste has ferrous citrus elements. Lighter and maltier than is typical for the style, dry enjoyable. Palate is herbal.

Bottle. Amber color. Massive gusher. Malt, blackcurrant and toffee in the aroma. Malty sweet toffee flavor with blackcurrant, Apple and soft tart notes. Caramelly sweetish flavor. Drinkable, nothing special.

Bottle at la brasserie torre del mar, spain. Hazy brown , white head. Aroma is yeasty malty and sweet dried yellow fruity. Flavor is yeasty malty sweet. Quite belgian , you would not guess it was not an original belgian strong ale

12oz bottle at a bar. Pours a slight hazy opaque orange. Thin white head that dissipates to almost nothing. Sweet malt, banana, some booziness in the aroma. Flavour is sweet malt but not bready, caramel, banana, some ripe red fruit in the aftertaste.

Thick mildly-sweet caramel malt, yeasty esters, cloves, banana. Some off flavours on the finish, but overall excellent. Way to go US monks, teach those Belgian (and that one Dutch).

La mousse sort de la bouteille à l’ouverture. L’olfactif nous offre des esters fruités aux notes d’orange, des aromes de pain, des épices aux allures de clou de girofle et de poivre. Olfactif complexe. Une bonne mousse crémeuse blanc cassé recouvre le liquide doré/orangé très flou. La mousse persiste bien. Le gustatif est épicé, fruité et sucré avec de belles notes orangées, du clou de girofle, du poivre et une finale légèrement épicée où l’alcool s’immisce subtilement. Les sucres sont représentés par des dérivés de la canne et se donnent des allures de jujubes. La carbonation pourrait être plus forte et la finale plus sèche. Construite dans la tradition Trappiste, il y manque cependant quelques éléments pour atteindre cette perfection.

330 ml bottle, from Det Bette Ølhus, Aalbæk. ABV is 6.5%. Muddy brownish-golden colour, moderate to small white head. Aroma of malts, old jam and mild spices. Soft carbonation. The flavour has malts and Belgian ale yeast, peppery notes of mild spices, hints of dried dark fruits, there is a slight sweetness but the beer is quite refreshing. Would buy again.

Spencer are the only American Trappist brewery and I hear they even make NEIPA! Glad I can finally try some I think Konishi imports them to Japan. Spencer Trappist Ale 6.5% This smells great like a classic Belgian beer: peppery, bready, honey and fruity. Full bodied with a round carbonation and rich fruity flavor with clove and sweet honey notes. Bang on.

Flesje gedeeld met H en B. Oranje bruin bier, licht troebel met matig schuim dat snel weg trekt. Aroma van mout en gist en ietwat zoetig. Smaak is moutig en licht hoppig. De nasmaak is bitter.
