We brew a series of beers that use only one hop instead of a blend. Our second adventure is with what has long been a firm favourite at Wiper and True – Simcoe. Simcoe is rich with fruit flavours, from bright citrus notes to berries, plums and passion fruit, all tied together by its famous resinous pine like qualities. It has the complexity and subtlety that made us fall in love with this hop and want to showcase it on it’s own.

We like to keep our Pale Ale malt bill nice and simple. This is mostly Maris Otter Pale Ale malt with just a hint of CaraMalt and Torrified Wheat lend a beautiful fluffy head.

Our Malt comes from Warminster Maltings, a traditional Victorian floor malt house just down the road in Wiltshire. They produce the finest malts available and are a thoroughly nice bunch. This beer is a showcase for the US hop Simcoe. Usually rife in India Pale Ales, it adds aromas of peach and flavours of warm stone fruit to this single hop pale ale. Bred in the heart of hop country by Yakima Chief Ranches in the famous American Yakima hop valleys, Simcoe is incredibly versatile across aroma, flavour and bittering. Intense pine and woody aromas add to the fresh fruit notes of this showcase for a beautifully complex hop.

Fermented with Safale S-05 yeast

Bottle shared at Chriso’s mid-week lasting 03/07/14. Hazed golden orange coloured pour with a halo of white head. Aroma is midget gems, mixed fruit punch, and a zip of lemon zest. Flavour is lemon, clean yeast profile, midget gems and tropical fruits. Good clean base malt backbone. Palate is soft carbonation, grainy and yeasty, Good beer.

Bottle at The Grapes, Oxford, Sunday 3rd August 2014 Pours orangey light anber with a white rim of bubbles. A frisky nose a little elderflowery cats piss even, despite a review which thus far hardly seems like a ringing endorsement, this is excellent the Simcoe hop used well (as it is here) is really punchy, lots of fruity flavours. Lovely beer. A8 A4 T8 P4 Ov16 4.0

Bottle at Chriso going Dutch tasting, 03/07/14. Lightly hazed golden orange with a moderate off white covering. Nose is juicy citrics, chalky minerals, apricot jam, bitter orange, citric pithdom. Taste comprises bitter tropicana, orange pith, earthy hop presence, mineral wash. Medium bodied, fine carbonation, smei drying close with light hop bitterness. Solid enough APA.

Craig on Heat Tasting at ChrisO’s. Hazy pale gold beer, small pale cream colour head. Palate is light and dry. Light fine carbonation. Light malts, little dry cream, mild sweetness. Dry dusty mid!! Spicy start to the orange and marmalade hops. Dry crisp finish. Okay.

Bottle shared at chriso’s. Pours mostly clear gold with a frothy white head. Lovely citrusy hops in the nose, nice tangerine, orange. Light-medium sweet flavor with some minerals, oily hops, pine, hay, grapefruit. Light bodied with fine carbonation. Soft citrus fruits on the finish, mellow pale malt sugars, some sand, lemon peel. Not bad.

Bottle at Craig on heat tasting. Some simcoe hop. Nice enough pale ale. Nice pale ale goid peppery finish.

Bottle at bag of nails, Bristol. It pours hazy golden-amber with a small white head. The nose is fresh, orange, tangerine, earth, muffin and sherbet. The taste is crisp, bitter, earthy, orange peel, grapefruit, tangello, spice and minerals with a dry, citric finish. Medium body and fine carbonation. Nice citrussy bastard.

Bottle from Beer Central, Sheffield. Hazy, lumpy, orangey, amber. Film of sticky, white head. Sweet, jammy malt. Red fruit. Dark plum. Some ripe banana, but not to any detriment. Taste is fusty sweet to start, before a chewy, grapefruit bitterness. Slightly cloying on the palate, but this is a tasty beer. Toffee sweet finish, with just enough bitterness to lend balance. Lots of oomph.

Cask-conditioned at the Bag O’Nails, Bristol, April 2014. Deep gold with a slight haze and decent, white head. Aroma of passion fruit, pine and tangerines. Solid malt base, with more tropical fruits and resin, before a lengthy, bitter finish. Good beer.
