This installment in our “Street” series of India Pale Ales spotlights the remarkably complex Nelson Sauvin hop from New Zealand. Stillings Street is hazy, pale orange in appearance and emits aromatic qualities of earthy white grape and lemongrass on the nose. The palate balances delicate flavors of grapefruit zest, ripe kiwi, lychee and mango with touch of peppery spice on the finish. Stillings Street features the crisp malt character, soft, effervescent mouthfeel and clean finish of our Signature IPA series.

Mixed review can pour from the brewery, Canton (2019), draft at Matchplay, 2025. Appearance is opaque dark yellow/dark tangerine orange with numerous tiny dark floaties, minimal sparkle, finger-width off-white foamy head with fair retention and light lacing. Aroma is strong citrus, grape and melon--overall nondescript mix. Taste is dominant tangy nondescript citrus (bordering on astringent) with milder late grape and melon. Mouthfeel is light-to-medium bodied with smooth, frothy texture, soft carbonation and finish as taste with late mild bitterness. Overall, some nice features and tangy, dominant citrus quieted over the years. Still lacing a distinct character. Flaws apparent in 2019 have been quelled, and pleasant but nondescript.

16oz can at home. Pours a deep orange almost amber, small off white head that dissipates quickly. Nose is an interesting mix of citrus and lemon, grapefruit, pineapple, some cracker notes. Taste is pineapple and spruce with a slight unpleasant orange rind flavour. Nice bitter finish

Level 42 Bottleshare. Wingman can, big cheers! Hazy gold beer, small pale cream colour head. Airy palate, semi dry and with good fine carbonation. Light malts, sweetish, very thin cream. Minerally fresh orange, trace of orange peel. Light finish brings tangerine and hop spice. Good stuff.

Taste comprises mango, orange peel, cantaloupe melon, resinous pine, light spruce lick, toasted breads. Medium bodied, fine carbonation, semi drying close peppered with juicy hop bitterness. Another solid IPA from the Trillium production line.
