Confidence is our hoppy red ale. It was brewed as a tribute to Kung Fu San Soo Grand Master Jimmy H. Woo whose motto was “You can take my life but not my confidence.” I was very fortunate to be trained by first generation Master Chuck Cory who instilled that confidence in me. I designed this red ale in respect of his red master characters. Without his influence and the positive encouragement of my family I would not have had the confidence (or insanity?!) to chase my dreams around the world. The beer has a bold ruby colour. The malt character is quite strong, with generous helpings of toffee, which is overlayed with a bitter and citric hop hit. This beer slides effortlessly past your defenses and assaults your mouth with flavour, leaving you overwhelmed. The red colour and warming character make it perfect for autumn drinking, we've therefore used to try to release it around that time annually but adapting to it's demand it has now become one of our primary cores.

330ml can from Ales by Mail

Pours dark reddish brown with a smooth white head. Aroma of caramely malts, hints of toffee, citrus, pine and resin. Taste is smooth, sweetish and watery with some caramely malts, toffee, floral notes, hints of resin and grass. Finish is sweet, slightly watery and caramely with some hints of pine. Could’ve used some more body or hoppiness.

Can. Amber with an off white head. aroma of caramel, berries, orange zest, some pine, white pepper. Light bodied, edging up on watery. There is no "rich malt profile", but there’s a suggestion of bread crusts and chocolate underneath the fruit and pine. Refreshing.

330 ml. can. BBF 08/2016. Deep brown red fruit amber, creamy off-white head. Nose is big sweetish strawberry & light red fruit hops, lightly malty, light touch of iron. Taste is slightly conflicting mix of red fruit hops, pine, strawberry, touch cheesy hops even, body is a touch empty, grapefruit peel, bit hollow dark bread malts. Soft carbonation, body is a touch empty. Almost touch watery, Not perfect, should have been chewier & maybe with a dash more hops but nice overall. Interesting enough, drinks well, bitterness is not excessive, touch dry, bitters a bit, drinks easily.

Bottle from Cornelius. Murky amber/brown body with a thick beige head that holds well. Lots of sticky lacing. Aroma is toffee apple, wood and shower gel. Flavour of caramel, orange, lychee and a peppery fnish. Medium body with an oily texture. Lively fizz. Big flavour for 4.6% ABV.
