Dry and refreshing golden colored saison with a full and complex flavor profile.
An elegant thirst quenching! ...And our story begins. The One is the first beer we brewed together when we had met in Brazil. It’s also the first beer we brewed after moving to Belgium, the beer we got served on our wedding day (but stronger : 10% alc.) and the first one brewed at Atrium’s.

Bottle picked up from Dranken Geers, Oostakker nr Ghent, Belgium after a 26 mile cycle ride along the Danube River to Regensburg and back. We're at a campsite close to Bad Abbach. Saturday 3rd August 2019. Pours hazy gold with a white head, soft in the mouth, a little sherbert, some citrus, good farmhouse Saison vibes showing. Really loving this.

Bottle at home in Hackney - sourced online. Pours clear gold with a foamy, white head. Nice classically styled saison, some lemon meringue, wheat bread, cracked wheat grains, straw. Light to medium bodied with fine, massaging carbonation. Balanced finish, more hints of lemon, saison yeast, wheat flakes. Drinks easy.

19 May 2019. At SWAFFF!, Brussels. Cheers Anke, Erwin & Ama Deke! Clear golden, lasting, thin, foamy, off-white head. Aroma of vanilla, wet wood, straw, banana peel, apple sauce, honey, white bread, peas. Taste is medium fruity sweet, notes of banana & pineapple on a wheaty-lemony sourish base, honey-like & (white) bready malts supporting bitter notes of grass, pepper & coriander, leading to a dryish, grassy hoppy finish where yellow fruits, wheat & yeast linger. Medium body, slick texture, soft carbonation. Underwhelming, coriander isn't too prominent but the rest doesn't impress either.

Geel levendig bier met weinig schuim. Smaak is licht bitterzoet hoppig en ietwat kruidig met iets van citrus en perzik.

33cl bottle from Malting Pot bottle shop in Brussels. F: medium, white, quick diminishing. C: gold, hazy. A: malty, vaguely fruity, bit bready, bit spicy, apricot, floral, I don’t get much of DMS here. T: malty, bit wheat, banana, light spicy, orange peels, coriander, bit soapy, dry on the palate, DMS traces, almost like witbier than saison actually for me, medium body and higher carbonation, almost enjoyable.
