Dennenbomen groeien vaak op kerkhoven. Ze zijn daar aangeplant omdat ze symbool staan voor het eeuwige leven. De dennenappels die aan de bomen groeien zijn het teken van wedergeboorte en nieuw leven. Toen brouwerij Burial uit North Carolina samen met Frontaal naar ons kwam, lieten we ons inspireren door hun naam en besloten we een bier met dennen te brouwen. In het voedselbos vonden we twee soorten, grove den en Koreaanse den, waarvan we jonge takken hebben geoogst.
We hadden bedacht dat de dennentakken in dit bier de hopsoort chinook konden nabootsen, een kruidige hop met aroma’s van naaldboom en citrus. Maar wild bier is eigenwijs en trekt graag zijn eigen plan. We moesten daarom ons oorspronkelijke idee begraven en samen met het bier een ander pad bewandelen. Pine Trees and Cemeteries is na tien maanden houtrijping een bijzonder fris bier geworden, met verfijnde zuren en volle, rijke toetsen van rijp fruit. We hebben lokale honing van Bijmegen toegevoegd, die deze smaken nog sterker naar voren brengt. Op de achtergrond proef je nog een echo van de dennennaalden, terwijl de vluchtige tannines van het naaldhout een lichte bittere afdronk geven.

Endelig Mandag i annen på Cardinal, og vi gjør et siste forsøk på å pleie gamle alkoholskader. Uklar korngylden så og si uten skum. Deilig lambic-aktig surhet både i aroma og smak. Spanske bitterappelsiner, hvite rips, hint av stall/høy. Det jeg eventuelt hadde av plaque forsvant raskt. Sparer dermed tid når jeg skal legge meg i kveld, tror jeg kan droppe tannbørsten.

Shared bottle at Mi2 at Cardinal 31.08.20. Muddy peach colour. Some white head. Sour aroma and taste of lambic, oak and sour tropical fruits. Good!

750 ml bottle, batch #1, Cardinal Pub & Bar, Stavanger. ABV is 6.7%. Golden colour, only slightly hazy, with a minimal white head. Aroma of pine needles, apple cider, farmhouse, honey and oak. Very moderate carbonation, but not lifeless. Medium sour flavour of pine, honey, apple cider, brettanomyces, apple cider vinegar.

375ml bottle from Chez Sophie, Shrewsbury. Pours misty gold, white froth. Nice wild floral funk on the nose, continuing to taste. Pine and honey notes are barely discernible, certainly open to interpretation, but overall it's a nice Nevel wild beer, just hoped there would be something more to set it apart, like much of their releases.

Bottle. Golden color. Honey, oak, citrus and earthy, soft herbal notes in the aroma. Sour citric flavor. Very fruity, especially citrus. Honey. Soft earthy notes. Well balanced. Nice!

On tap @Luppolo Station (Rome). Dorata, torbida, schiuma bianca media. Al naso note citriche, erbacee, di pino, sottobosco, medicinale. In bocca è acidula con chiusura amarognola, leggermente minerale. Corpo medio, carbonnazione media. Particolarissima!

Sample from bottle @ Hopfen Dank Fest, Birreria Duexer Botschaft, Köln. Pours slightly hazy yellow, with a tiny creamy head. Aroma is tart notes of hay, fruity brett with white berries, grapes and lemon peel, as well as tannins, minerals and wooden notes. Medium body, with soft carbonation. Flavour is tart fruity notes of hay, white berries and citrusy notes of lemon, as well grapes, tannins and wooden notes.
