Strong Barrel aged Sour Ale. The Abbaye de Saint Bon-Chien is a strong sour ale of mixed fermentation, aged during a year in old wine oak barrels. The oak aging and the action of wild yeasts confer this beer’s astonishing wide range of aromas. Its outstanding komplexity, balance, roundness and long finish, are the fruit of the meticulous blend of selected barrels. On the palate the blend reminds one of fruity red wines with a pronounced balsamic sourness. The best way to enjoy a Bon-Chien is to serve it in an elegant wine glass at 16°C or 60.6°F paired with a duck breast or some panned foie gras for example.

A way to brew the beer that it is not my favorite but I am learning to enjoy it, bottle sharing with Fred. The beginning is too sour and dry but after you get perfumed side of oak, nuts, cherry, apricot that it is giving a subtle side of the beer, 20.09.2021, drinking it at Epalinges.

Sharing this bottle yesterday with Karina and Mariela. For me, I had a great experience with this beverage, good and subtle sour beer with a greal Belgian touch, subtle notes of cherry, oak, barrel, red grapes with smooth tanins, nuts, sourness, oh yes!!! 12.02.2022, at Epalinges.

A lovely beverage that I have shared with Mariela and Karina, perfect with a smooth green curry. This version is more fruity than the 2017. You get a perfect side of cherry and red fruits, smooth, dry malt, yeasty, hop, good job!!!!! 15.02.2022, at Epalinges.

The sixth one of 22 beers for our 12th wedding anniversary. White Ašát's.
Bottle 0.75l. Cloudy, copper colored. AROMA- red wine, dark grapes, strawberry, honey, plum, sweet jam, berries, touch of brandy. FLAVOR- lightly sweet, light to medium sourness, tart finish, the same as aroma, sour cherry, red and black currant, blackberry, blueberry... Full, syrupy body.
Simply great.

Bottle. Ok, said it before. Just not a fan of sour type ales, but I keep trying. Nice pinkish color with a decent head. Aroma, funky sour cherries and taste was the same. It does give you a good buzz though.

Shared bottle @ Eldorado, Zurich. Murky amber body with a small beige head. Aroma is funky, ripe fruity, wood, leather, sour berries, vinegar and hint of acetone. Almost a bit unpleasant in aroma, but it opens up with some air and feels a lot better when starting to drink. Flavor is complex, sweet brown malt in combination with acidic vinegar, wood, dry fruit, ripe fruit, cellar notes and spices. Fine body and long lasting, tart aftertaste.

Ok, i’ve been anxiously waiting for this.
Aroma is fruity, and sour, with a touch of caramel. the sourness is very much like a flemish sour, and overall the aroma is very much like wine. Flavour is woody, the oak really comes through. Its a combo of an oak aged flemish sour, and a barley wine. I’m getting the sourness with oak and caramel. If there ever was a beer that deserved it’s own classification its this one. VERY interesting, i thoroughly enjoyed it! 15.5% are you kidding me!?! i wonder if thats a typo, the alcohol isnt even close to being present. Wow, awesome stuff

From tap at Erzbierschof, Zürich. Aroma is malt, vinegar, tart fruits, funky notes, touch of peach and strawberries, vinous notes, oak. Flavour is medium sour and light sweet. Body is medium. Nicely complex, malty and fruity, both sour and a little sweet, like a hypercharged Flanders Red. You wouldn’t guess this is an 11% brew from drinking this piece of work.
