3 Fonteinen Oude Kriek is the result of macerating hand-picked whole sour cherries on young lambic for at least four months, in a proportion of one kilogram of fruit per litre of lambic. The kriek lambic is then blended again with more young lambic to obtain a minimum intensity of 35% fruit, and is bottled immediately afterwards. These bottles are then stored in our cellars for at least five months so that the kriek lambic can develop into a beautiful, traditional, and refined Oude Kriek. With a pleasant tartness and organic notes of almond and cinnamon as it warms in the glass, 3 Fonteinen Oude Kriek, will age perfectly but may lose some of the vibrant red colours and forest fruit aromas. This unfiltered and unpasteurised lambic is all-natural with no artificial juices, syrups, or sugars added. Traditional Lambic is living, cultural heritage rooted in the Zenne valley!

Assemblage # 76 Saison 19/20 Doux aromes de cerises (griottes) avec une base assez présente de levure sauvage aux accents de vieux cuir, d’étable et de terre. Liquide rouge brunâtre et voilé, ne présentant aucune mousse. En bouche, c’est doux, avec un équilibre bien établi entre le fruit et les levures. Une impression de salé s’installe en fin de bouche dû à l’intense action des notes de levures. Un boisé assumé se marie à l’ensemble avec un fond de caramel très subtile. Les griottes sont présentes tout au long du processus. Le corps est un tantinet charnu et rehaussé par l’ensemble des saveurs. La carbonatation est très faible. Un plaisir à chaque gorgée. O:9.415 V:1.63 G:8.569 C:4.175 G:17.75 T:41.539 Blend # 76 Season 19/20 Sweet aromas of cherries (griottes) with a fairly present base of wild yeast with accents of old leather, stable and earth. Liquid brownish red and veiled, with no foam. On the palate, it's sweet, with a well-established balance between fruit and yeast. An impression of saltiness settles at the end of the mouth due to the intense action of yeast notes. An assumed woody flavor blends with the whole with a very subtle caramel background. Cherries are present throughout the process. The body is a little fleshy and enhanced by all the flavors. Carbonation is very low. A pleasure with every sip.

Bottle 37.5cl. Corked and caged, bottled 2 May 2016 (bought 11/16 bbd 10/36) @home poured into a tumbler. Clear pink ruby colour, small fizzy off-white head, shortlasting, light lacing. Rich and thick aroma, sweet and sour cherries, cherry syrup, wood, cinnamon, retronasal funk. Taste sweet and sour, funk, sour cherries, vinegar, woody, nutty notes, cinnamon. Full-bodied, watery to sticky texture, average carbonation, long lasting semi-dry sweet and sour aftertaste, woody and nutty notes, well-balanced, sumptuous, yummy and excellent.
