Due to the micro-organisms present in the brewery, the beer undergoes a second fermentation, this time a spontaneous fermentation on wooden barrels by Lactobacillus and Brettanomyces.
After a maturation of 16 months on wooden barrels previously containing Chateauneuf du Pape red wine, the first batch of this unique beer was bottled and fermented a third time on bottle.

0.375 l bottle from 'Etre Gourmet', 2019 vintage. Hazy, orangeish amber with a thin, frothy, slowly diminishing, white head. Sweetish, slightly sourish, gently vinous-fruity aroma of red wine, overripe lemon, honey, black tea, candied apricot and vanilla. Slightly sweet, moderately sour, gently vinous-fruity taste of red wine, honey, vanilla, overripe lemon and oak, followed by a medium long, gently tart finish. Medium body, smooth and almost oily mouthfeel, soft carbonation. Quite complex, very well-balanced brew, maybe a bit past its peak.

Green bottle, 37.5 cl, via SAQ - Aylmer on 1 November 2019, savoured on 15 April 2025; eye: coppery with golden highlights, semi-opaque, no effervescence, no head, no lacing; nose : acidity, fruity, caramelised, earthy, light madeira; mouth: acidity, fruity, caramelised, light madeira, caramelised finale with light fruity presence, medium body, flat, mildly sweet, slick texture; in summary: too old

375ml shared with George @ 🏡 Appearance: hazy copper with a white head. Aroma: very weird, kinda sour and dirty, some funk, bold. Taste: along the same lines. Overall: meh.

Poured from 375mL bottle (2021 vintage). Hazy dull orangey amber with full white head. Weird phenolic funk with very feint esters, loses the a lot of the quality of regular Bersalis Tripel and add some weird phenolic funk notes that doesn't compliment that beer. Meh

Vi er nå på oppløpssiden på en superb Mi2 på Cardinal, der er har ikke et edru blodomløp i sikte på en god stund nå. Denne er fra store flasker, klar gylden med fint skum som varer. Oksydert aroma (minner om et vitrineskap som ikke har vært åpnet på lenge), og smaken er i retning epler/sider med bismak. Småsur avslutning.

Clear golden, white head. Aroma of barrel, apples, honey, spice, fermentation. Taste of apples, citrus, almost resembles a cider.

Bottle picked up from Drankgigant webshop Vlissengen Netherlands and consumed sat outside at home Friday 14th July 2023 listening to Steve Lamaq on 6Music. About to cook Chicken and Halloumi Burgers. Pours amber with a mid sized white head, tangy and tart, fruity, smooth, zappy and quite a fuzziness. This is a very good.

Bottle from Delhaize. Clear dark golden, stable, foamy, white head. Aroma of wet hay, straw, cheese, wood, old furniture, musty cellar, white pepper, green apple. Taste has sour green apple, unripe peach & white grape wrapped in a bready malt body with notes of yeast, funky hay, cheese and lemon acid. Old grassy hoppiness in the finish, lending bitterness, lingering lemon & unripe yellow fruits, wet wood, hay and some white wine-like alcohol. Medium body, moussy texture, average carbonation. Very refreshing; the still recognisable Tripel profile is truly enhanced by the Lambic.

Sampled at Max's Belgian Fest 2023. Pours a dark gold, no head. Booze and oak on the nose, pineapple, candy. Flavor is very boozy, tequila and white port with some pineapple. Finishes thin too.
