Deschutes Brewery and Hair of the Dog Brewing join forces to weave The Dissident and The Stoic and Fred and Adam into an artistic collage of cask-aging alchemy. Damn. Beer is fun!

Conflux No. 1 - Collage is the second release in the Deschutes Conflux Series. These beers were brewed in March of 2010. One hundred percent of these beers spent two years aging in a variety of oak barrels: Rye Whiskey, Cognac, Sherry, Pinot Noir, Bourbon, used American Oak, new American Oak and new Oregon Oak.

Bottle as shown thanks to Matt. Pours a cloudy brown with small beige head that diminishes to nothing. The aroma is rye, candy sugar, and sherry. Medium mouthfeel with sweet caramel, light oak, sweet finish. Very good.

Very nice muddied brown coloured body with a thin, oily tan head that fades fast and some nice deep copper and brown tints when held up to a light. Aroma of a ridiculous amount of complex notes, mostly sugars. Oak, sour grapes, cherries, vanilla, pit fruits, raisins, figs, earthy malt, caramel and licorice are all noticeable. Medium to Full-bodied; Very complex flavour as well with some minor sour notes starting it off showing cherries and grapes then changing to a large alcohol and caramelised sugar flavour with figs, brown sugar, earth, toffee and a little vanilla at the end. Aftertaste is very nice with the warming hit of the alcohol all with the complexities throughout, also showing some light spices at the end and a hint of oak and bourbon. Overall, a very nice beer - i’m glad I gave it some time, it seems to be quite mellow and very complex throughout. Definitely worth getting if you can find it and of course, if you can afford it - this isn’t cheap, and it flew with me all the way back from Honolulu, but this was easily worth the price and the ~5000mile journey back home and into my stomach. I sampled this twelve ounce bottle purchased from Liqour Collection in Honolulu, Hawaii on 10-December-2012 for US$13.95 sampled at home in Washington on the opposite end of this fine country on 23-January-2014.

On draft st independent ale house it is a dark brown color with a slight head. The aroma is of vinegar the taste is of cola that leads to a strong raisin flavor with a hint of sherry.

On draft at the Indpendent Ale House in Rapid City SD. Pours a cloudy brownish amber with an ecru head. Tart apple aroma. A melange of vinous flavors, oak, and bourbon notes. A somewhat strange mix of flavors, which did not immediately grab me. Tart finish.

Bouteille 33cl de Ibrew2or3, thanks Dave. BB after 04/2013. Couleur acajou, col épais et crémeux beige. Arôme offre des très belles effluves de boisé et de suret avec pas mal d’impression de vin blanc et raisin. Le mélange, ou alors l’assemblage?, des différents fûts offre un bouquet complexe ou chaque barrique trouve sa place. Palais est vraiment bien fait avec une nette influence de HOTD de par ce côté suret-aigrelet qui est tout bonnement plaisant. Note aussi le côté boisé avec un malt pâle pour un fini un peu sec. La barrique est dominante, pointe d’épice et boisé le tout compléter par un fruité-raisin blanc subtil ponctué par les différents profils utilisés dans cette assemblage. L’alcool quoique élevé ne vient pas vraiment déranger, et de ce fait on a une bière très plaisante.

Clear purple brown beer, small aery light beige head, little stable, bit adhesive. Aroma: caramel, fudge, milk chocolate, fruity notes, dried fruits, alcohol. MF: ok carbon, medium body. Taste: sour, from the first sip till the last. Also very spicy, alcohol, liquor, red wine tannins, bitter hops. Aftertaste: alcohol, spices, caramel, sour touches, overripe banana, bourbon (?), very sour, bit dirty, infected?

35cl Bottle, thanks for saving this gem Harmen! I’m surprised not to see HotD in the name of the beer btw. Slightly hazy deep ruby amber/brown colour, off-white head. Aroma of vanilla, oak, vinous, red fruits like cherries/strawberries/raspberries, light tartness, made me think of a bourbon barrel-aged Flemish brown, quite complex. Flavour is light-tart, malty, red fruits, oak, vanilla, some spirit sharpness, wine, tart-bitter finish with some alcohol. Full-bodied. Great stuff, even after Old Rasputing and KBS.

Bottled. A hazy amber beer with a yellowish head. The aroma has notes of brettanomyces, caramel, and malt. The flavor is sweet with notes of alcohol, caramel, brettanomyces, and lemons, leading to a bitter finish.

Dark amber ale bordering on a sour ale. Tart, sharp cider snap, dried fruit, wine like esters. Smooth and slick mouthfeel, with lingering tartness on the palate. A sipper for sure, with food.

Aroma is fairly oaky with some bourbon notes. Lots of malt with caramel and dark fruit. Light smokiness and roast with some toasted bread aroma. Fruit is prunes and figs along with some cherry. Pours a dark murky brown with a thin light tan head that recedes fairly quickly. Light lacing and moderate legs. Flavor is pretty nice. Starts with a some sweet dark fruit - raisin, fig, plum and cherry. The fruit has a background malt character of caramel and toasted bread with a hint of roast. Finish has oak and bourbon, a medium low bitterness and some dark fruit along with a hint of tartness. There are also some burnt dark Candi sugar flavors. Light alcohol spice. Mouthfeel is fairly full bodied with medium low carbonation. Low but noticeable astringency and medium alcohol warmth. As it warms it becomes more fruity. Overall a better beer than I remembered this being a year ago. The fruit is starting to integrate nicely with the darker malts and high alcohol content. Its still fairly sweet which will hopefully become a bit muted.
