Jopen Ongelovige Thomas is onze interpretatie van een quadrupel. Een uitgesproken bier met volle moutsmaken als hoofdsmaak. De Amerikaanse hop zorgt voor een fruitig karakter.
Het bier is vernoemd naar de apostel Thomas die niet geloofde dat Jezus uit de dood was opgestaan. Zijn feestdag werd vroeger gevierd op 21 december, de start van de winter. Dit roodbruine bier is een ware winterwarmer. Verrassend en rijk van smaak. Proeven is geloven…

On tap at Cardinal, Stavanger. Pours black with dense beige head. Aroma of dark dried fruits, caramel, ethanol, some phenolic notes. Tastes slightly sweet with balancing bitterness. Medium bodied.

750ml bottle from the Offie, Leicester and drunk at home. Mahogany/brown and translucent with a small ring of beige head. Raisins, some chocolate, light notes of caramel sneaking in. Sweet taste with souring notes of soy sauce. Not sure if this is meant... Thinner body than I'd expected and fairly flat carbonation. It's okay but I expected more for this style.

Bottle. Perfume, lowery on wooden, light leathery dry belgian yeast nose. Pours a dark red chestnut, golden brown cream. Medium to full chewy body, mellow sparkles, pleasantly dry on the palate. Wood, dark sugar, bready roast, spicy honey, licorice and chocolate, salt licorice aftertaste. Very drinkable.

Acquiring this 33 cl bottle from a retailer in the Netherlands was no easy feat, I hope a tasting proves it was worth it. Who am I kidding, it's a quad. My Great Heights snifter is arrayed for the pour, mahogany in color with a wispy but persistent skim of light tan foam after the head settles. Right off I like the smell. Stewed fruit, caramel, grain along with some yeast working its way up. The taste is good, something of an improvement over the scent even. Chewy dark fruit, leather, malt, biscuit, crisp candi sugar, dates and perhaps some hay. A little bitterness at the end. I call this a straightforward quadrupel, a classic representation in the style. I am enjoying this one, hope to see it again.

Deep dark brown coloured body with a robust, four to five centimetre tall tan head that stays afloat almost entirely during the duration of the sample. Aroma of pungent pitted fruits, deep yeast and bread with a lot of caramelised sugars, toasted malts and a lot of alcohol still noticeable here, at least in the nose. Full-bodied; Very strong rich malt notes dominate up front with the sugars, yeast and breadiness here as well along with a good complexity from the malt and alcohol, but the pitted fruits, raisiny and molasses-like sweetness make this very nice flavoured and quite full-bodied throughout. Aftertaste shows the complexities from the sugar, mixed with the yeast and breadiness along with a pungent maltiness and a noticeable, but not overwhelming hit from the alcohol, especially at the end. Overall, a very nice, rich, pungent and complex malty beer with more sweetness than anything else and coming from the right sources, with plums, raisins, grapes and figs all noticeable along with molasses and a good deal of yeast and bread at the end, but the richness persists. Great to have, especially in the nice setting of a famous bar here in Amsterdam! I sampled this 33 cL bottle purchased and sampled at the bar In de Wildemann in [central] Amsterdam, Holland, The Netherlands on 17-January-2015 for €6,60, a few days after my second daughter was born, but with my friend - Thanks Phil for the memories!

Smoke, tobacco, florals and some tangerine. Hazy brown pour with decent head. Sweet and tangy finish. Nice balance. Some leather. Nice stuff. Bottle.

Raisin and light smoke. Some prune. Light sweet finish with a little floral aroma. Easy drinking and hides booze well but not super complex. Tap at churchkey.
