Coolship Cerise’s tart, dry profile is rounded out by notes of fresh-picked cherry, pie spice, oak, and a hint of apricot. To make this beer, we fill our coolship—a large, shallow pan-like brewing vessel—with unfermented wort that gathers wild yeast as it cools. The beer then ferments and develops its flavor in oak wine barrels for up to two years before we add 100 pounds, per barrel, of locally grown Montmorency and Balaton cherries. We hope you enjoy this balanced, crisp, and complex taste of Maine.

50cl bottle pours a translucent garnet purple. Plenty of carbonation but no head at all. Nose has cherry and cranberry, some blood orange, some neutral wood or Lambrusco. Flavor has cherry juice, Lambrusco, some vanilla and some tannins, any hint of citrus is gone. Call me crazy, but it’s a touch sweet, some cherry cough drop or cherries jubilee. Finishes with just the slightest bit of acid and plenty of fruit.

Bottle, 375 ml at In de Verzekering tegen de Grote Dorst. Pours cloudy orange with small white head. Cherries, funk, barrel, some vinegar, medium+ acidity. Medium bodied.

Pours darker amber . No real head. Smell is wet cherries , funk, dry. Taste is cherries, tart, complex, wood . Very nice

Bottle thanks to JB! Pours clear blush pink, small off-white head, dissipates super quickly, decent lacing. Aroma is cherries, Brett, basement, mineral water. Flavor is medium plus tart, medium funky, bright cherries. Light body, soft mouthfeel.

Bottled 12/21/15, drunk 6/25/16.
Intense cherry juice colored body shows a good clarity and just a hint of chill-haze. Pink-flecked beige head atop shows moderate retention.
BIG barnyard in the nose and we are talking borderline baby diaper here. Sulfur to the max and while there’s definitely a little bit of baby diaper, it’s not nearly as bad as Casey’s Montmorency Farmstand. Vanilla, cream-of-wheat and boisterous cherry notes all help boost the aroma above just a barnyard bomb and there’s a bit of earthiness and rustic hay/wheat-like character in there as well. Light black pepper phenolics contribute an authentic character and there is no alcohol noted.
Lovely sour and tart cherry notes combine with authentic lambic-like qualities. Carbonation is mostly engaging with a light but soft body and all elements of the fruit appearing through the middle and lingering: flesh, skin, pit, acid, sugar....Nicely done and glad to see more funk from Allagash.

Bottle shared at the level 42, 24/05/2016. Many thanks to Paul for this one. A hazed golden orange coloured pour with a lasting thin white head. Aroma is big layered funk, dirty horse, tangy apple, little sweet, peppermint, spicy sour. Flavour is composed of sweet and sour, apricot jam, spicy lacto, marsipan, sour tangerine. Palate is sweet and sour, prickly carbonation. Like it a lot.

Bottle split at Level 42, big thanks to Bropey from Croyloon, 24/05/16. Hazed orange with reddish hues topped with a washed out crimson swirl. Nose is light fecal notes, tarte cherry, funk, pissy straw, apple core, light lemon roulade. Taste comprises bitter cherry, funk, barnyard, light spice, wood must, bramble berry pips, damp hay, light acidic bite. Medium bodied, fine carbonation, puckering rise and acidic melodrama in the close. Solid, well balanced Lambic, has aged well, nice acidity level, sharp but not overwhelming.

Bottle dated 25th Jan 2012. It pours hazy rose with a decent white head. The aroma is musty, funky, Bakewell tart, cherry pie, marzipan, almond, jam and sherbet. The taste is crisp, tart, fresh acidity, sour cherry, raspberry pip, Bakewell tart, lemon sherbet, touch of alcohol, rhubarb and marzipan with a dry, wood finish. Medium body and fine, foamy carbonation. Well rounded and mellow. Tasty stuff.
