Brasserie Noir is a barrel-aged imperial stout aged in wet cabernet barrels for up to 12 months. Dried fruit aromas and vanilla and currant tones frame the flavors of Brasserie Noir. This Imperial Stout balances malty sweetness with sharp acidity imparted by a twelve month aging process in Cabernet barrels.

2018 bottle received from a friend. I was advised that this one has been turning sooner than the BCS's, so here we go.
More dark brown than the black of the usual Bourbon County. Brown ring of foam at the edge. The smell still offers some bourbon, or maybe it's the oak from the barrel. Perhaps the cabernet is coming in a little bit at a time. The combination of roast malt and red wine, though, are making for an impression of Jalapeño peppers. Yet its amazingly nice drinking, and I'll be sipping away through the whole 750 ml bottle.

750mL bottle, pours jet black with a small tan head. Aroma has plenty of red wine tannins, medium roast, and wood. Flavour has plenty of tannins, medium roast, light wood, and red wine barrels. On the drier side, with a woody, tannic finish. Good but not amazing.

Bottle. Pours a black color with a small off-white head. Has a roasted malty chocolate woody wine aroma. Roasted malty woody chocolate flavor. Has a roasted malty woody wine and chocolate finish.

Taster at Liquor Express. Pours black, with a big, bubbly, brown head. The aroma is vanilla, toffee, chicory, raspberry, and maple. Sweet and sticky, with a mild bitterness. Heavy body, with a creamy, smooth mouthfeel. This is a delicious, nuanced, and clean stout.

A deep dark imperial stout with a thin dark brown head. In aroma, beautiful sweet chocolate malt with light caramel, light vanilla, faint pepper, very nice and complex. In mouth, a beautiful mix of chocolate, maple, vanilla, light wooded notes, alcohol warmth, very nice. On tap at Clybourn location.

6700th review! 765 ml bottle into snifter, bottled on 11/15/2017. Pours opaque dark brown/black color with a 1-2 finger dense and rocky tan head with great retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation retaining the cap. Aromas of big milk/dark chocolate, cocoa, molasses, caramel, toffee, brown sugar, raisin, plum, cherry, fig, date, currant, red grape/wine, toasted oak, nuttiness, and dark/brown bread; with lighter notes of vanilla, coffee, licorice, leather, tobacco, smoke, and roast/toast/oaky earthiness. Damn nice aromas with great balance and complexity of dark/roast/bready malts and Cabernet barrel notes; with great strength. A bit stronger on dark fruit notes than the taste. Taste of huge milk/dark chocolate, cocoa, molasses, caramel, toffee, brown sugar, raisin, plum, cherry, fig, date, currant, red grape/wine, toasted oak, nuttiness, and dark/brown bread; with lighter notes of vanilla, coffee, licorice, leather, tobacco, smoke, and roast/toast/oaky earthiness. Mild roast/char bitterness and tannic wine spice/tartness on the finish. Lingering notes of milk/dark chocolate, cocoa, molasses, caramel, toffee, brown sugar, dark fruits, red grape/wine, toasted oak, nuttiness, dark/brown bread, vanilla, coffee, licorice, leather, tobacco, smoke, and roast/toast/oaky earthiness on the finish for a while. Amazing complexity, robustness, and balance of dark/roast/bready malts and Cabernet barrel flavors; with a nice nice roasted bitter/sweet and wine tang/tartness balance; with zero cloying sweetness after the finish. Slightly increasing dryness from lingering roast bitterness and wine tang/tartness after the finish. Light-medium carbonation and very full body; with a very smooth, creamy, silky, velvety, and rich mouthfeel that is amazing. Light slickness, stickiness, chalky roast, and wine tang/tannins. Lightly increasing warmth of 11.8%, with slight booze lingering after the finish. Overall this is an amazing wine barrel aged imperial stout! All around incredible complexity, robustness, and balance of dark/roast/bready malts and Cabernet barrel flavors; very smooth and dangerously easy to drink for the huge ABV; with the very mildly bitter/tart/tangy finish. For 12 months in the Cabernet barrels, it isn't overly fruity or tannic at all. Extremely rich malt complexity with perfectly balanced wine characteristics; and an absolutely amazing smooth soft mouthfeel for a big stout. A highly enjoyable offering.

Draught @ Malt & Mold. Opaque dark brown with small creamy beige head, striking dark chocolate-molasses cocoa aroma, low carbonation, mildly sour dark chocolate drink taste with alcohol undertones, extremely smooth body, long cocoa finish. Incredibly smooth, dark chocolate drink type of feeling, well covered ABV.
