This beer is all about creating tropical fruit flavours from the fermentation without using actual fruit. By fermenting with only Brettanomyces yeast and Lactobacillus and adding a tea of aged hops to the wort this magic happens. It is a mysterious and enigmatic beer that is easy to love. Aged in oak foeders and drawn off using a one vessel solera style method.

750 ml bottle, batch #57, Cardinal Pub & Bar, Stavanger. ABV is 6.0%. Slightly hazy pale yellow colour, pours sparkling with a moderate white head of poor retention. Strong aroma of lactic acid, also notes of lemons and pickled vegetables, also cooked celery and other cooked vegetables, DMS (dimethyl sulfide). Sour flavour, lactic acid galore, distinct notes of cooked celery and other cooked vegetables, and DMS. Not my cup of tea.
