Pours a medium dark amber-brown, surprisingly clear. Small, stable white head. Scent is mildly showing it's age ( this beer was originally brewed for one of my 10k beers, which was an Icebock of this one. However, I never tried this one fresh, and decided for whatever reason to age all my bottles of Ymir basebeer) , but dried fruits are very recognizable, whiff of caramel, fairly complex dark breadyness as well. very vineous, I could be tricked to think this was aged on red wine barrels for sure. Taste is showing a surprising amount of bitterness, over a fairly thin body - both are surprising elements compared to my expectations. High to very high carbo, still very vineous, as it's got some acidity just like a wine does - it's not at all a sour beer though. Shame for the overcarbonation, otherwise a more than fair basebeer - yet so very different to what I expected. These could take a few more years, I reccon !

16/05/2019 @home - 33cl bottle from a trade with tderoeck Clear red brown, small light tanned lacing, Nose is grains, fruits, caramel. Taste is sweet malts, caramel, fruits, spices. Maybe not the most inventive Totem but not a bad beer at all.

Doppelbock by Totem, steinie bottle at Trollekelder in Ghent. Irregularly edged, mousy, slowly opening, bit bubbly, pale greyish beige, eventually almost completely dissolving head, misty chestnut brown robe with bronze hue. Aroma of dried figs, caramel candy, damp earth, blue plums, fried banana, ‘Roosvicee’, dry cookies, black cherry, hay, almond, honey, touch of cloves. Sweet onset, banana, apricot and cooked red apple, sourish undertone, very soft carbonation (eventually almost flat, in fact); caramelly malt body with lingering red apple and banana aspects as well as a gently bittering toasty edge, while a thin layer of sugary sweetness remains and sticks a bit to the teeth. Herbal, bit tea-ish hop bitterishness in the end together with warming alcohol, but the caramelly and honeyish sweet side remains dominant. Bit undercarbed and rather sweet and fruity for the intended style, more a ‘massieve ale’ or quad than a true German style Doppelbock in fact, but a rich and interesting sipper nonetheless. I have to admit that Totem has done more spectacular things than this one, though.

2nd Feb 2019; Brugge Bier Festival. Dirty dishwater murky brown, scum on top. Malty molasses in the aroma giving hints that the beer was going to be sweet; it was! Just didn't like this at all, it was a sweet malty mess with a 'rank' mini sourness from somewhere that shouldn't have been there. My free 'CAMRA' token paid for it.

sample shared @ Bruges Beer Festival 2019 day 1. with 77ships and tderoeck. F: very thin, off-white, very quick gone. C: brown, hazy. A: sweet malty, bit caramel, bit milk chocolate, molasses, vinous, dried fruits. T: sweet malty, bit vinous, caramel, bit molasses, bit sour fruity, medium body and lower carbonation, this is what? Bit too weird all together.

3 February 2019. At Brugs Bierfestival. Cheers to Anke & Pieter! Hazy brown with a lasting, small, thinning, frothy, beige head. Aroma of plum, brioche, caramel, peanut, orange peel, cookie dough, (bloody) iron, green tea. Taste is medium malty sweet, brioche dough, caramel & plum with a 'peanutty' edge, light herbal bitterness has green tea, forest leaves, yeast, sourish lemon accent & something vaguely metallic. Dryish, herbal hoppy finish, bit fruity, tart even, some caramel, and warming liqueur alcohol. Medium body, oily-syrupy texture, fizzy carbonation. Bit of a wayward beer, can't put my finger on it. Not in line with my expectations from Totem; need to retry it sometime.

Thanks! Sampled draft @ Bierfestival Brugge 2019. Base beer for the Blow Your Trumpets Ymir Eisbock. Ugly murky brown with a red hue. Nose is weird spoiled red fruit(?), oxidized malt, mothballs. Taste is strange mothballs, sweetish, cereal, oxidation, murky, bit sour,… Murky oxidized malt, not sure as to what happened here but it worked better in the Eisbock version for sure which was the goal in the end, anyway I blame kraddel :)

Little cloudy reddish brown beer, small creamy beige head, unstable, falls down quickly, non adhesive. Aroma: very fruity, some banana, lactobacillus, red fruits, oxidized, some raisins, floral, bit of honey, orange peel. MF: no carbon, medium to light body. Taste: pretty oxidized, slightly sourish, dried fruits, raisins, soft roast, some chocolate, rather thin. Aftertaste: bit spicy, caramel, some cinnamon, chocolaty, sweet, soft bitterness, some overripe banana.

Cloudy reddish brown beer, big solid creamy beige head, little stable, adhesive, leaving a nice lacing in the glass. Aroma: sourish, oxidized, bit weird, some dried fruits. MF: ok carbon, medium to light body. Taste: bit watery, soft acidity, rather metallic, some dried fruits, bit of caramel, more oxidation. Aftertaste: some overripe fruits, bit soapy, very spicy, cloves, not very good...
