We're big fans of the classic Old Fashioned – a 19th Century cocktail traditionally made by muddling sugar with bitters, then adding Whiskey and a twist of citrus rind. This is our take, with Barley Wine as the base beer and the classic orange zest to serve. It's been in barrels for 12 months, picking up a well-rounded bourbon profile with some vanilla and caramel sweetness. Bitters optional!

Bottle. Clear black color with beige head and a ruby highlight. Aroma is bourbon, raisins, vanilla, orange peel. Taste is fudge, chocolate, vanilla, almost cloying. Thick oily mouthfeel with medium carbonation. Okay, this gets really cloying over time... more like 6-4-6-3-13

Barrel aged barleywine with orange zest by Siren, bottle shared with Craftmember. Thinnish, off-white, sparsely lacing moussy ring over a warm, lightly haze bronze beer with ochre edges and a deep ruby red hue in its ‘belly’. Aroma of candied cherries, ruby port, almond, toffee, maple syrup, pecan nuts, chestnut cream sauce, rum-soaked raisins, marmalade (which presumably represents the orange zest), muscovado sugar, whisky, some vanilla-ish oak, bourbon, Grand Marnier, dried prunes. Very sweet onset, bordering on cloying due to a lot of residual brown sugariness but in a noble, ‘candied’ way, reminiscent of fig compote, marmalade and yellow raisins; soft carbonation, thick, vinous mouthfeel as can be expected from a sweet English style barleywine. Thick caramelly, fudge-like malt body with thickly hazelnutty edges and a touch of chocolate to it, bit resinous, honeyish with that residual sugar sweetness persisting till the end, where the orange zest, malt and sugar sweetness, wood notes and warming, long alcohol effect all blend together in a Grand Marnier-like effect; hop bitterness in this whole story remains very much in the background. Very rich, complex, sweet and desserty, thick barleywine, absolutely great if you love this style, but perhaps just a tad too sweet and sticky for me personally.
