We use a traditional turbid mash schedule followed by an extended boil and wild inoculation overnight in our coolship before transferring to barrels for a lengthy fermentation. Oaky, with a pleasing acidity, this beer is unique to our landscape.

On tap at Indy Man Beer Con, Oct 2019. Pours hazed golden with a loose white head. Aroma: baked apple, lemon hints, light bretty notes. Taste: light sweet apples, lemon hints, cidery vibes, light to moderate acidity. Medium body with loose carbonation. I found this more palatable on release than the first iteration but it’s a beer that should age well.

Bottle split at L6, thanks to Fergus, 20/11/19. Hazed golden orange with a decent off white covering that retains well. Nose is funk, wood must, tangy citric shreds, lemon rind, stoned fruits. Taste comprises damp oak, barnyard esters, lemon tinged straw, faint cheesey tones, damp hay. Medium bodied, soft carbonation, drying close with a mellow acidic bite. Decent but not as good as the first Coolship release.

Bottle shared in London - big thanks to Fergus. Pours unclear orange-gold with a foamy, white head. Lovely stuff up front, restrained funk, tangy citrus, background grass. A touch of butter maybe towards the end. Light to medium bodied with delicate carbonation. Perhaps not as strong as Coolship No. 1 right out of the gate, but still a very nice beer overall.

Thanks Yushima for sharing! Teku showing pale straw with sparse white foam. The nose shows moderately intense tart notes of brett and cheese. The palate is light bodied and well carbonated. Lightly tart with light notes of malt and a light tea bitterness.

Shrewsbury Beer Share Group Meeting, Chez Sophie; 28th Oct 2019. The boys know I love a sour-puss (not)! Cheers Paul for this 750ml bottle of Cooking Apple juice. Sour and tart, just like a Belgian Lambic. scored objectively.

75cl bottle @ monthly tasting, Chez Sophie, Oct 19. Thanks Paolo for this rare 75cl donation. Pours misty golden yellow, frothy white bubbles. Aroma is fruity, sugary, tangy, lemon. Not super sour in general, but has a nice tart complexity with some interesting fruity wild flavours.

Bottle. RAD Beer. Hazed, medium gold. White froth settles to an island and ring of dense head. Nose has sweaty brett. Preserved lemon. Baked apple. Polished leather. Some oily hop leaf. Taste has an apple sweetness. Light, leafy bitterness. Medium body. Pretty oily and slick. Fine carbonation. Some acidity. Finish has a decent juicy tartness. Nice one. Will hang on a while before popping another, as there’s plenty to come here.
