We’ve never released a Bourbon Barrel version of our Judgment Day. So we thought it might be interesting to take the base beer for Cuvee de Tomme age in first fill Bourbon Barrels and let mother nature take over. Of course, because this is a Rock and Roll inspired Box Set beer, we couldn’t just leave well enough alone. Upon sampling the base beer, it became apparent that the raisins used to brew the base beer were going to drive the flavor bus of this beer. The conversations turned to Oatmeal Raisin cookies and the essence of a freshly baked treat. So we added some cinnamon sticks to the barrels and threw in some dried chiles as well.

Bottle, 2016 version apparently, from Carwyn Cellars. Very dark brown with a beige head that's soon at the rim. Aroma of stewed and dried fruit, Bourbon, And the Bourbon doesn't back off upon a taste - it doesn't dominate but it's upfront. Not much more than medium bodied. Sweetish with fairly rich fruit but a spicy and moderately boozy finish. In time I believe there is chili. Surely not a Quad/ Abt (even if that's a thing beyond two beers) but it woes to earth and sea pretty well.

Beer #10 (the last before actual 10000!) of my 10,00th Beer Milestone Celebration! Super dark brown coloured body with a very nice, muddied glow and a thinnish, off-white and deep tan head that fades relatively quickly, but below is the murky body, about 80 per cent opaque due to the shade and sediment. Aroma of super strong pitted fruits with raisins, figs, prunes, grapes and a bunch more molasses and toffee here - strong in the sugars as well as the roasted/toasted malt grains and some earthy, nutty notes with a light underlying notion of vanilla, cream and lactose, but that's probably due to the rich malts and the plentiful sugars. Full-bodied; Very rich malt body with a lot of roasted oatmeal and grainy elements here along with a dash of prunes that seemingly add to the body, but the pitted fruit and residual sugars are very strong here of course with a lot of toffee, caramelised sugars, treacle, raisins and molasses all here and a light hit of coffee bitterness and graininess that is showing some rustic, earthy, mushroomy notes as well, but not horribly strong. Aftertaste is balanced quite well, considering the alcohol content here, but there is obviously a lot of sugars and body from the malts, with a tiny dose of bitterness (probably not from the hops, but from the roast) and a light hit of dryness, but this really is all about the nuanced sugars and grainy malts here, but showing well considering everything, perhaps (most likely) due to the age of this one - it's been kept a seemingly 'right' amount of time for the bottle. Overall, a great beer overall, showing some alcohol, but perhaps around 11/12% at most and while there is no chile heat here now (I don't know if there ever was?), the malts are very nice and add tremendous body, while still making this quite drinkable - great to sample now after all these years and to save it for such a milestone before THE beer to really celebrate! I sampled this 37,5 cL bottle as Beer #10 [of 21 - 10 (for 10,000) of Each side of the 10,000 Beer Milestone and the 10,000th itself!] of my 10,000th Beer Milestone, purchased from Joe Canal's in Lawrenceville, New Jersey on 21-October-2018 for US$16,99 and sampled at my house here in Washington on 15-May-2023.

375ml bottle. Opaque, dark brown colour with small, fading, beige head. Sweet-ish, spicy aroma, notes of cinnamon, dark toffee, a touch of Bourbon, herbal liqueur. Taste is sweet-ish, spicy, chocolately dark malty, slightly fruity, notes of cinnamon, hints of dark toffee, raisin, a touch of Bourbon, slowly accumulation peppery spiciness; well hidden alcohol. Oily texture, smooth and soft, slightly cloying palate, soft to flat carbonation. All in all a very nice cinnamon exposition in rather unspecific surroundings.

Bottle @ Dangerous Bottleshares #whoknowshowmany. Pours muddy brown with a small offwhite head. Aromas of bourbon, dark fruits, cinnamon, vanilla, chocolate. Taste is bourbon, chocolate, vinous, malt, dark frutis, vanilla, booze.

Bottle. Hazy brown color with beige head. Aroma is caramel, chocolate, raisins, cinnamon indeed. Taste is cinnamon stick, raisins, chocolate, a bit of a chili catch. Silky mouthfeel with high carbonation. A bit overattenuated, but that's part of the style I guess.

Bottle courtesy of the RB group München, Wednesday 12th June 2019. Pours hazy chestnut colour with not much head. Lots of dried fruit, soaked in booze, the bourbon barrel ageing is good. Sweet, soft mouthfeel, boozy edge starts to rub around the gums. Good.

Bottle. Boozy bourbon aroma. Cloudy dark brown, medium full chewy, light foam, orange peel, a bit booze, alright bourbon, almond, nice pralines, a bit cherry, sparkly finish.

Darkest brown. Aroma is raisins, cocoa, chocolate, cinnamon, fig. Taste is intense raisins with cinnamon. A little boozy but a nice finish of caramel raisins and fig. Quite nice. Slow drinker!

Porter-colored with very little head but enough carbonation. You can smell the bourbon barrel / alcohol hints with umami soy. Hints of coconut. Very sweet on the tongue, warm and soulful, if it wasn't so sweet you could really drink a lot of it. The bourbon boozy flavor is quite strong. Excellent, especially considering the huge ABV.

Bottle. 14%. Color: Very dark ruby, almost black. Beige head. Aroma: Sweet Bourbon, spicy. Taste: Starting caramel malt, toffee, pretty strong yet well balanced sweetish Bourbon, vanilla. Notes of Chiles, sweet chocolate, hints of cinnamon, raisins, roasted coconut. Over medium sweet, average bitterness. Warming mouthfeel, mostly because of the pepper, maybe also some booze. Long lasting finish. Full body, below average carbonation. Sticky mouthfeel. Very nice, complex and well balanced.
