Notre première bière barriquée, quelle émotion!
C'est un projet qui nous tient particulièrement à coeur en plus. On ne le cache pas, nous sommes des fans d'Oud Bruin. On voulait donc faire que chose dans cet esprit mais y apporter notre petit twist habituel.
L'idée est plutôt simple: la bière est fermentée par des lactobacillus et notre levure maison pendant quelques jours, elle est ensuite transférée en barrique de vin rouge avec notre cocktail de levures sauvages et y repose pendant environ 3 mois. Juste assez pour lui donner des notes bien WILD! C'est donc une Oud Bruin mais produite plus rapidement: une Jonge Bruin

Clear Brown color and an off-white head. Sour nose, acidic. Taste Is tart, cask & Woody flavors, acidic. Refrehing. Rather Lite Body.

Hazy brown, thin, beige head. Aroma of sour cherry, malt vinegar, leather, pear, wet wood, cranberry. Taste has sour cherry & plum, sweetish pear, herbal, woody, some biscuity malts. Tart finish with red fruits & malt vinegar, softly warming red wine-like alcohol. Medium body, oily texture, soft carbonation. Very interesting brew, and very nice to drink.

Bouteille 37.5cl, BB 03/12/2021.
Cuivre sur la fin avec une certaine opacité/voile, col fin blanc-cassé.
Arôme au nez marqué par des effluves qui me replonge de suite dans les grandes classiques du style - retrouve des notes vineuses sur un rétro-nasal de barrique et aigreur. Fruité oscillant sur un côté cerise aigre, baies noires et sauvages groseille/cassis et sucre candi. Un effet caramélisé/sucré perce encore en rétro-nasal.
Palais est plaisant avec une belle touche aigrelette, fine note de barrique.
Fruité noire - raisin, prune, date et baies sauvages + sucre candi apportant ce côté vineux/aigre-doux le tout sur une petite note balsamique. Ce dernier apport est plaisant sans jamais tomber dans un effet surfait.
Le tout sur un caractère effervescent moyen qui tranche bien le style de 'jeune' brune.

Layered head upon pouring, building up whilst equalizing colours from deep ochre to cream thick, dense head; brown beer with sparkling red-purple highlights, veiled. Pedio/lacto nose, even Bretts, making it a quite gueuze-like aroma, old wood, brown candi sugar, woodpulp, smoke-y-ish, cassis or suchlike blossoms. Indeed, as they say themselves in the blurb - YOUNG Bruin. It misses indeed the depth of a really aged beer, but it does feature the red fruit hints, the nose of dark and burnt maltsugars, the old musty wood. Yet - not enough complexity for a real Oud Bruin. Light, bit slick, film-like feel. Good carbonation. Better than OK, but there is room for obvious improvement. Oh, and guys, it is JONG Bruin, not jonge.

Draft 250 ml. @ brewery. Dark brown murky with only a few bubbles as head. Quite sour lemon but also heavy dark cherry, leather, black bread & tobacco, this would be spectacular if the body wasn’t this thin & watery, near flat, low balsamic vinegar, fix that body & this will be world class.

13/IX/20 - 37.5cl bottle from Geers (Oostakker), shared @ home, BB: 3/XII/21 (2020-908)

Pretty clear red brown beer, small creamy beige head, pretty stable, non adhesive. Aroma: wood, caramel, bit oxidized, malty, some cookies, slightly roast, hint of vinegar. MF: ok carbon, medium body. Taste: fruity, soft acidity, lots of lactobacillus, bit dry, some tannins. Aftertaste: fruity, nice acidity, bitter touch, wood notes, lactobacillus, bitter, some tannins, grapeskin, good one!
