Rustique started life as a ‘clean’ strong Belgian style pale ale. After a primary fermentation we transferred it to Foudre No. 4, that had previously held different mixed fermentation beers.

The residual wild yeasts worked their magic over 15 months to produce a unique wild pale ale.

Clear dark golden colour with thin head. Aroma is packed with musty grapey white wine notes. Also an element of farmyard yeasty funk. Flavour has a sharp tang. Fruity and grapey. Sweet undertones. Nice and dry in the finish.

Aromat nieco zbozowo-mirabelkowo-piwniczno-ziemisto-zakurzony. Ciekawostka. Dzikosci tej takiej radosnej, lambikowej nie ma zabardzo. W uscie zaskakujaco ciezki. Dobre to, ale tez rozczarowanie zarazem. Aha, i to wcale nie jest jakos specjalnie wytrawne.

Bottle at home in Hackney - picked up from the Burning Sky web shop. Original vintage. Pours lightly unclear orange-gold with a sturdy, frothy white head. Light-medium sweet flavour with moderate acidity, citric tartness, subtle woody dryness, nips of grass. Medium bodied with delicate, massaging carbonation. Light warmth in the finish, tart lemon and tangerine, light funk, melon, pale wood, cleansing acidity. Excellent.

75cl bottle Sophies Beer Store, shared with Soph and Paul for Soph's lockdown birthday. Unclear gold appearance, large white head. Aroma is wonderfully fresh and bright with lovely wild floral nuances, delicately fruity. Taste continues, aligning more towards a lambic-level of complexity and sharpness, with great fruit definition emerging. Very good indeed.

0,75 flaske delt på Mi2 Cardinal sep-20: uklar gylden med fint skum som varer. Både aroma og smak kom seg betraktelig når vi slo oppi de siste 3 cm fra flasken, nå kjenner vi virkelig hva fatlagringen har gjort. Fruktig og behagelig syrlig med lang ettersmak. Bringer tankene hen mot en solid eplecider eller en fatlagret pale ale. Hint av stikkelsbærsyltetøy?

Bottle. Burning Sky online. Light haze on a pale copper colour. Fine white head is dense and lasting. Nose has sweet apple and ripe stone fruit. Vanilla. Lightly fusty oak. Touch of mouldy bread. Touch of sweaty brett. Hugely gorgeous. Taste is tangy and juicy and tart. Crisp and clean. Mouthfeel is fresh and bright, but not without some depth. Never feels the ABV. Juicy bitterness with a little sourness coming through on the finish. Beautiful.

Bottle. Burning Sky online. Deep gold. Moderate haze. Fully lacing, lasting, dense white head. Looks boss. Nose has leathery brett. Citrus peel. Clean oak. Hop spice. Cracked pepper. Vanilla. All backed up by loads of fresh stone fruit. Taste is tart, juicy, and tangy bitterness. A little drying. Some fruit sweetness on the lips. Super easy drinking for the ABV. Very smooth. Soft carbonation. Juicy and tart bitterness to finish. Fantastic stuff.

Shared bottle at Mi2 at Cardinal 28.09.20. Hazy golden. White head and lacing. Acid aroma and taste of brett, sour white wine, citrus, sour gooseberries and unripe mango.

Shared bottle at Cardinal, Stavanger. Pours hazy amber with off-white head. Aroma of berries, citrus, some floral hop notes. Tastes slightly sour with some sweetness. Medium bodied, some alcoholic warmth. Sour finish. Nice and complex beer.

750 ml bottle, Cardinal Pub & Bar, Stavanger. ABV is 8.5%. Golden colour, large white head. Nice aroma of spicy saison yeast (yes: rustic), hints of gooseberry jam and herbs. The flavour is fruity, spicy and slightly acidic. Moderate bitterness.

Bottle at home. One year old. The colour is slightly hazy amber with a lighet beige head. Aroma of oak, hay, almonds, green apples, apple cider vinegar, apricots, white pepper, forest floor and horse. Flavour of pale malt, wet hay, bread, grass, oak and apple cider vinegar. Warming alcohol in the end. Has a slick and a little soft mouth feel, medium to full body, and a surprisingly light to medium bitterness lingering in the ned. Complex and rich. A nice mix between a Belgian strong pale and a wild fermented ale.
