Pours clear blonde. No real head. Scent is mild, bit funky, malty, subtile. Taste is full, sharp and acidic, very bright, citrus, honey funk. Very clean. Balanced acidity.

750mL bottle, blend #5, drunk 2/12/23. Clear, bright, blonde-golden. Large, well-retained, white head. Moderate-to-light lactic acidity mixing with moderate Brett providing gentle tartness, strong stone fruit and light-to-moderate oakiness. No butteriness from oak, no acetic/alcohol or any other aggressivity. Nothing too heavy on the honey fermentation character - no big pepper or wax or anything like that. Just a nicely foedered, well-lagered saison. Tart and lactic, not too much so, in the mouth with a round, well-attenuated, malty texture with evident honey-like notes (hints of sweetness with starfruit, white pepper and such). Acidity becoming gently lemony and rounding on the finish with soft oak and succulent base malts. Brett is vague, though evident, pleasant. This has an outstanding balance with strong Sacch saison character (apple, black pepper, mineral). Tartness never comes on strong, maltiness is excellent, oak is tasteful. Not sure what goes wrong between SP's excellent saisons and their enamel-stripping sours, but this is impeccable and makes me recommit to keeping up with their saisons.

Sample at the roost pours a clear gold with a ring of white head. Nose is nice, green grapes and green apples, lemons and straw. Flavor is more complex and nice, lemon and grape, but unripened stone fruit, champagne and neutral barrel. Tart, dry, medium full bodied. Nice.

Bottle @MBCC 2024, Blue Session, courtesy of the US neighbours. Funky fruity aroma. Some leather and straw. Sweet fruity flavour, sweet citrus and slightly rough funk.
From backlog. Taster, from Bottle, at Mikkeller Beer Celebration Copenhagen 2024. Cloudy pale yellow/ Golden with white head. Malts, hops, yeast, lemon, floral, honey, sour, sweetness.

Some honey, some vanilla oak. Don't get as much almost, maybe a little. Orange. Pours light clear golden with decent head. Plenty of lemon. Tart finish, but not excessively so. Tap at Churchkey.

Tap at Imazato. Hazy gold. Lemon, honey, vanilla, grapefruit, bit fnky nose. Sweet vanilla and lactose, honey, tart, grapefruit zest, lemon, orange. Crisp and lovely sour ale.
