Taking cues from the brewers of the Baltics, we selected a lager yeast to ferment this dark beer. Keeping the fermentation cold makes the beer extra smooth and brings out the chocolatey malt flavours.

Cask at Winter GBBF: Poured a brown with circle of off white. Aroma is roasted malts. Taste is chocolate and roasted malts.

Cask handpull at Lime Kiln Bristol. Near black beer lasting tan head. Roasted aroma with light sour dark cherry aroma. it's like an old ale more than anything. good. hides abv well. the spur dark cherry flavour is lovely. good.

Gravity cask at the Blue Boar as part of their 2020 Night and Day Festival. Dark inidgo/black with a tiny ring of khaki/tan head. Blackberry, cooking chocolate and yeast extract notes are dominated by liquorice in the muted aroma. Sweet taste with an earthy bitterness at the finish, full of tar liquorice, charred wood, more blackberry and some prune. Thick, oily body with very little carbonation.

8/2/2020. From cask at the Great British Winter Beer Festival, Birmingham. Pours mid-dark brown with a small bubbly off-white head. Aroma of roasted malt, chocolate, caramel and coffee. Medium sweetness and light bitterness. Moderate body, slight oily texture, soft carbonation.

Cask @ GBBF, Birmingham. Small head with short duration. Color is close to black. Aroma and taste are roast malt, chocolate, caramel, hops, coffee and has a nice bitter finish.

Keg at RNV. It pours deep ruby with a small beige head. The aroma is earthy, toasty, umami, roasted malt, salted action and milk chocolate. The taste is dry, bitter - sweet, oily, milk chocolate, toasty, tannin, wood, leather, chewy action, liquorice and fruit cake with a sweet milk chocolate finish. Medium body and fine carbonation. OK.

Dan's Stag. Beer Emporium. Bristol. Cask. Opaque dark brown beer, patchy pale tan head. Smooth and semi dry palate, modest fine carbonation. Smooth mellow and sweetish dark malts. Trace of dark chocolate. Reasonable dark fruits. Mild spice on the light dry finish. Okay.

Draft at the Royal Naval Volunteer - Bristol. Pours black-brown with a foamy, tan head. The nose has toasted brown bread, cocoa. Medium sweet flavour, more brown bread, vanilla, burnt marshmallows. Medium bodied with fine carbonation. Nicely balanced finish, with notes of cocoa, milk chocolate, soft roast. Solid.
