In de lente en zomer dwalen we door het voedselbos, over smalle paadjes met overhangende takken. We ruiken bloesems, proeven zaden, leren de seizoenen beter kennen. Een doorntak blijft hangen aan een shirt, een voet glijdt weg in de modder. We lopen voorzichtig, want elke plant, hoe klein ook, heeft een functie. Onkruid bestaat niet. Het is een plek waar de natuur regeert, met zo min mogelijk menselijk ingrijpen. We weten nooit van tevoren wat we kunnen oogsten, we zien ter plekke wat de natuur ons te bieden heeft. Het voedselbos leert ons om te vinden in plaats van te zoeken.
Dwaal is ons zomerbier me Szechuanpeper en inheemse berenklauwzaad uit het voedselbos. De tarwe in het bier is geteeld op de Doornikse natuurakkers vlakbij de brouwerij. Dwaal is een wild bier met frisse, natuurlijke smaken die doen denken aan citrus met een hint van gras en hooi. Een verfrissend, aromatisch bier dat goed smaakt op een zonnig terras, of bij een picknick op een boomstronk.

Keg at GBBF ‘19, day one, 06/08/19. Hazed golden yellow with a decent off white cap. Nose is grains, light citric peel, straw, white peppery spice. Taste comprises grass, tarte citric notes, hay bale, light acidic tingle. Medium bodied, fine carbonation, semi drying close. Passable simple sour.

At GBBF: Poured a murky yellow white head. Aroma is off maybe hoppy maybe sour. Taste is sour citrus, peppery some garden earthness.

On tap @Luppolo Station (Rome). Gialla torbida, opalescente, schiuma bianca abbondante, mediamente persistente. Al naso note da blanche, esteri, itronella, leggera speziatura. In bocca ha un attacco lievemente dolce con acidità finale rinfrescante, leggermente citrica. Corpo medio-leggero, carbonazione media. Un po' banale e confusa, ma ok.

Typical ‘wild’ Nevel ale, this time with Szechuan pepper and hogweed seed, the latter harvested in their own neighborhood (hogweed indeed being a common weed in the Low Countries); from tap at Dok Brewing Festival. Off-white, mousy, medium thick head, hazy straw blonde robe with warmer peachy tinge. Aroma of lemon balm, lime peel, green peppercorn, red apple, pear, dough, touch of white grape. Soft sour onset, lime-like and in that sense refreshingly citric, soft doughy malt body, softish carb, spicy effect in the end thanks to the Szechuan pepper with, in combination with the sour character of the beer and to a certain extent also the hogweed seeds I suppose, creates a refreshingly peppery and very lemon balm-like effect, followed by an earthy bitter hop tone. Very nice and refreshing, Nevel at its best, though I still don’t see the point of the hogweed, even if it does no harm either.

Pretty cloudy blond yellowish beer, creamy dense white head, pretty stable. Aroma: fruity touch, bit malty, banana. MF: ok carbon, medium to light body. Taste: sourish start, bit metallic, lots of tannins, lemon juice, bitter touch. Aftertaste: spicy, yeast, herbal, decent, soft acidity.

Bottle shared, thanks! Fairly hazy golden with a white head. Aroma of herbs, citrus and nettles. Flavour is moderate sweet and light moderate bitter with above light sourness. Light medium bodied with soft carbonation.

Bottle shared, thanks to sjogro. Hazy bright yellow with white head. Lots of spices, wheat, oats, flowery, Szechuan pepper corns, soft herbs, lemon rind. Under medium sweet and bitter, light sour. Almost medium bodied and quite some carbonation.
