WHITE cedar BLACK ipa Winter Edition
A more “warming” version of our white cedar lagered black ipa.
Expect more pronounced cedar notes and a slightly higher ABV.

This beer is available in 2 varieties:
Winter edition: Available Octobre to March(the one you are drinking right now)

Summer edition: Available April to September with more hops, lower ABV and
more refreshing taste.

Almost black beer with a cream-coloured, small head. Sweet and - indeed! - cedar, cypress and sandal, as well as new age herbs, holly. Sweet, resiny and again cedar, pine, Badedas. Very special perfumey - aromatic flavour, unlike anything else. Very well-bodied, chewy, slick. Good carbonation. Almost velvety texture. Loved "White cedar" from its first appearance. Nothing changed. Only, IMHO this isn't a black IPA... however, what it IS, is a bit more difficult to say.

Bottle, 8.1%. Color: Black, creamy light brown head. Nice lacing. Aroma: Roasted malt, hop. Taste: Creamy mouthfeel. Floral hop, roasted malt, some coffee. Spicy Cedar wood Hints of citrus. Moderate sweet and bitter with more bitterness at the hoppy dry-ish finish. Just over medium body, average carbonation. More of these quality Black IPA's please.. Very nice.

21 August 2021. At Gents Bierfestival. Cheers to the Ghent beer crew! Hazy black, stable, frothy, beige head. Aroma of oak, rosemary, basil, black pepper, medicin, herbal mix, vague walnut. Taste has sweetish prune & fig over toasty & walnutty maltiness; bitter herbal middle with rosemary note, black tea too. Herbal hoppy finish, spicy, woody, some warming gin-like alcohol. Medium body, oily texture, soft carbonation. Lacks some citrus to balance it out but not bad.

Bottle sample during Gents Bierfestival '21 - shared with Tderoeck and Nathan.
Brune foncée, col fin blanc-cassé.
Arôme est fin malté, grillé et caramel, petites effluves boisées de cèdre en retrait - note de chocolat arrive en rétro-nasal. Le houblonné apporte des notes fines fruitées - agrumes.
Palais est malté, finement grillé, caramel, effervescence faible-moyenne, petite pointe épicée venant du cèdre et en fin de bouche une note fine houblonnée herbacée oscillant entre thym et romarin. Le côté black IPA reste un peu discret.

Very dark brown with no head. Aroma and flavour have a certain floral woody note. Also some bay leaf liquorice. I guess this comes from the cedar wood. It's only in the aftertaste that the roasty bitterness comes through.

Clear dark brown to black beer, big creamy beige head, little stable, bit adhesive. Aroma: lots and lots of diacetyl, some roast, spicy, caramel notes. MF: soft carbon, medium body. Taste: bit sweet, caramel, diacetyl, spicy, cardamom and bay leaf, good roast, soft bitterness, bit spicy. Aftertaste: herbal, bit minty, sugary, caramel, roasted, coffee, very buttery, butterscotch, all diacetyl, wow, this is not good… :(

2021 : Pours black, small tanned head. Scent is full, roasty, recognizable cedar. Taste is very full, intense roast, even a mild ashy part, which is quickly overthrown by the wood. Cedar is very recognizable, but it works, and it works so well. It seems to provide a sweetness, or otherwise the sweetness goes 100 % along with the cedar, in terms of the 'curve of intensity'. Perhaps it's just a mindtrick with the aroma that delivers a sweet-like idea. Full bodied, with a medium, but very fine bubble carbonation. I love everything about this beer and it's so unique on top of that. 8.3/10

Rerate anno 2022 ; not much is different on the notes of this beer. It's just time to up the score a bit, since I think 8.3 was a bit low, for how great this is. I don't think the quality increased compared to year 1, but I tend to enjoy it even more, the more I tried it. Perfect (and I do mean perfect) balance of all the components, easy drinkable yet very solid to sit down and pick apart... This beer has it all. Easely one of the best beers on the current craft segment in Belgium. Curious to see if I'll enjoy it yet even more the coming year!
