It just wouldn’t be a complete collection without utilising the skills of barrel manager Steve, and of course, some of the finest oak barrels in our cellar. The art of ageing in wood vs spinning on wood comes with subtle differences that we love to explore, not least in this project. As soon as last year’s CCC barrels were emptied ready for release, we immediately re-filled with fresh beer to begin the journey of the 2020 vintage. The Buffalo Trace bourbon and rye barrels impart all kinds of spice, caramel and spirit notes, along with a delicate vanilla note and some tannins from the oak. We then spin the beer after it’s been aged, this brings us a fresh vibrancy of flavour and aroma to the beautifully matured beer.

33cl can (BBF: 11/11/21) from Etre Gourmet web shop. F: big, dark tanned, long lasting. C: dark, opaque. A: rich dark malts, chocolate, cocoa, caramel, roasted tones, espresso, dark fruits, bourbon, woody. T: full malty base, chocolate, roasted tones, cocoa, caramel, coffee touch, dark fruits, vanilla, dark berries, woody, dark cherries, soft to medium carbonation, very good, enjoyed for sure.

Can from Gedeelde Vreugde. Cloudy black, small, foamy, dark beige head. Aroma of wood, leather, fondant, cocoa bean, espresso, vanilla, earth, prune, bourbon. Taste has sweetish fig & prune, sourish brambleberry & cocoa bean over a dark-chocolatey malt base, bit toasty with a touch of coffee; umami accent. Earthy hoppy finish, woody & leathery almost, lingering cocoa nibs and dried fruits, gentle warming bourbon alcohol. Full body, oily texture, soft carbonation. Complex Stout, nicely earthy and somewhat sourish, but just not that expressive.

15/1/2022. Can from Hopsters, Ipswich shared with ITFCDan. Pours black with a small frothy tan coloured head. Super looking pour. Aroma of chocolate, bourbon, dried fruits, molasses, chocolate cake. Moderate sweetness, medium roasted bitterness. Medium body, slightly oily, soft carbonation. Boozy finish. Enjoyable.

Can. Darkest brown, brown creamy lace. Tobacco, dry spice rub, burnt nose. Sour grain, pine, milk acid, burn. tomato. very dry on on the palate. A lot more funky dry than the silky previous version I seem to remember.

Munich Ratebeer Group Tasting at Jonas, Garching Friday 22nd October 2021. Pours black with a filmy head, a little sour woody edge, there is a little tanginess, this is pushing it a bit but good, some woodiness, some balsamic. Good.

12 oz. can, pours jet black with a small light brown head. Aroma is loaded with chocolate upfront, followed by plenty of woody oak, some bourbon, and loads of what seem like red wine tannins (incidentally). Flavour definitely reveals an infection, but if this was red wine barrel aged with a touch of brett, I could be convinced that this was intentional. There's red wine tannins, very slight tartness, chocolate, and oak. Obviously this is not as intended, but it's not terrible. After time, the infection dominates and becomes overly intrusive. Needs fixing.
