Mixed Fermenation Grisette with Saaz and Mandarina Hops, Riesling Grapes & Honey.

This is little mixed fermentation beer is a part of my continuous search of the sense of place and finding new avenues for expressing seasonal and local flavours in beer. A crispy little reminder of seizing opportunity every day to experience simple, perhaps even whimsical and too often unexpected joys around us. This grisette is built completely from local organic ingredients. It was hopped very generously with Saaz and Mandarina and complimented with just a dash of Riesling grapes. After long conditioning it was then bottled with local honey for that lively effervescence. Enjoy it preferably fresh but it will continue to evolve in the bottle for many moons on. Na zdraví!

Bottle pour at the DCBeer December 2025 share. Poured a peach-hued yellow color with a medium sized white head. Aroma had some nice light yeast character, some mild earthy spices, light grapes. Pleasant carbonation, light funky notes, earthy, herbal. Liked this. Also, the bottle art was awesome.

Short lived fine snowwhite head over almost still metallic clear golden beer; end of bottle solid deposit. Unripe peach or nectarine, herbs, chamomille, unripe green fruit, rhubarb. Very delicate & light acidity; lemony if less sharp. Floral, spring flowers. Really distinctive. Unripe mirabelles, cidery, non-sweet apples. Light; despite still looks, fine pearling sensation, faintly slick. Another great beer, Mr. Sládek. But, where is it brewed?

Light golden yellow with a white head. Lemongrass, citrus, herbal, white grapes, earthy spice, vinous, and hay. Medium body with plenty of carbonation. A bit funky in the finish. A very refreshing and lovely ale. Put this on the table and drink it every night.

Bb 1.8.2027. Yellow body, with a big, white head. Aroma of citrus, lemongrass, dough, some stone fruits, hops. Tastes similar, a bit lighter. A bit creamy mouthfeel, with an average carbonation. Finishes smooth, yeasty, hoppy, citric. Very nice, smooth, balanced and fully aromatic for the low ABV. Lovely citric notes throughout. Score: 8 / 4 / 7 / 4 / 16

Taster From bottle at home. yellow cloudy color, small white head. smells grassy, citric, tobacco, herbal, subtle funk. Very nice smell. full body, soft carbonation. tastes citric, tobacco, herbal, earthy, hay. finishes lightly dry and lightly sour with notes of citrus, tobacco and earthy notes. Very nice rustic beer

Bottle 0.75l, one and half years aged. Clear, straw colored. AROMA- gooseberry, meadow grasses and herbs, candied orange peel, dried white grapes. FLAVOR- neutral, moderately sour, lightly bitter, gooseberry, dried white grapes, muscatel, lemon, herbal and spicy hops. Medium bodied. Really nice one.

Bouteille 75cl, BB 01/08/2027, merci Kevin.
Pâle, col fin blanc mousseux peu tenace.
Arôme sur un bouquet fleuri plaisant, jasmin, pêche, haies fruitières en fleur, fleurs des champs avec un léger côté poivre blanc. Nez céréales rustique, malt pils sur un effet 'saison'.
Palais présente un caractère fruité du Riesling assez sympa avec une très fine minéralité - le tout garde une touche plutôt rustique rappelant une saison avec un clin d’œil à DLS. Floral marqué avec un caractère de fleurs de jasmin avec un soupçon d'ananas du houblon Ariana ainsi que qcq agrumes. Fin de bouche plutôt sèche avec une amertume franche de deux houblons nobles qui se marient bien au caractère malté et du raisin.
