Voor Oude Geuze Villa Servais selecteerde de familie Boon (boon.be) samen met Maud en Geert (villaservais.be) de lambieken voor deze assemblage. Er werd gekozen voor een basis jonge lambiek waaraan 3-jaar oude lambiek werd toegevoegd die gerijpt heeft op kleinere eiken vaten. De oude lambieken uit deze vaten onderbouwen het eik-karakter in de smaak.

2021 botteling , I suspect its a specifically labeled batch of boon oude geuze. Pours clear blonde, medium large, stable white head. Scent is rich fruity, intense typical boon quality. Nice ! Taste is full, rich fruity , bit bitter, medium acidity. Somehow nutty, aged , almost a touch of oxidated richness. Very intense Boon geuze ! This one way passed expectations !

Bottle, 750 ml, shared with Hrvoje. Cloudy orange with medium white head. Funky, citrus, horseblanket, wood, some lemon. Soft texture. Nice.

Bottle. Slight hazy deep golden. Quite some oak, dry Boon funk, lemon, quite herbal, mineral. Almost medium sweet and sour, lighter bitter. Full bodied, sparkly carbonation. Quite nice, typical Boon stuff but also surprisingly herbal.

0.75 l bottle from 'De Bierliefhebber', bottled in June 2021. Hazy, golden amber with a medium large, slightly fluffy, slowly diminishing, white head. Slightly sweetish, gently sourish, rather funky, quite fruity aroma of horse blanket, oak, overripe lemon, green apple and gooseberry. Moderately sweet, quite sour, very fruity and rather funky taste of overripe lemon, gooseberry, horse blanket, oak, white pepper and some green apple, followed by a medium long, gently tart, fairly dry, woody finish. Medium body, smooth, gently astringent and rather effervescent mouthfeel, lively carbonation. Sublime Gueuze, very complex and well-balanced, heavily refreshing as well. Absolutely top-notch, typical Boon quality.

2021 bottling. Clear, fizzy gold. Big white head. Nose has funk and durian and lemon off the top. Grass and straw. Simple grist leads to green grape and papaya. Very bright. High carb is great along with the acid. Bone dry too. Drinks easy.

Bottle. Color: Slightly hazy golden, white head. Aroma: Lightly tart, fruity berries and hints of citrus, rural funk. Taste: Old hop, rural funk, oak wood, fruity moderate tart berries and citrus (lemon, orange), minerals. Dry-ish mouthfeel. Light bitterness. Medium body, below average carbonation. Very well balanced blend. Great Oude Geuze.

Bottle from Hans, many thanks! Golden colour, white foam. Dry, peppery with lemony notes, funky and dry. Very well balanced. Great geuze!

Blond colour with light haze and lasting head. Crisp and slightly more citrusy that others from Boon. Even a little tangy. Furthermore very easy to drink. Dry, minerally finish.

Taste: nice acidity, fruity, little bitter, juicy, lemony, dry, wood notes, some tannins, nettles, herbal. Aftertaste: spicy, dry, bitter, lemony, sourish, good stuff, spicy, herbal finish.
