For the past two years, we've been making a fruited blend with Camerise in small quantities. Also known as haskap or blue honeysuckle, these berries are slightly sweet with a beautiful acidity.
The beer's color is a deep, deep red. It's powerful and very fruit-forward, but still maintains a nice, mellow balance between acidity and astringency.
We didn't have to look very far for a its new name... a blue fruit that makes a blood-red beer: Sang Bleu. Our friend Ammo has outdone himself once again, creating a superb new label to go with its new name.

Maceration of 2-year old lambic with blue honeysuckle.

Bottle with thanks to John! Pours unclear magenta with floaties and a small bubbly off white head. Aroma is barnyard and blueberries, yogurt funk. Flavor is light plus tart, medium funk, nice berry notes. Medium body. Quite enjoyable

4oz pour at Proletariat. Inky purple with some sudsy pink head. Nose has bright ripe raspberry and some cherry, red wine lees, plenty of Cantillon funk. Jammy in the mouth. Raspberry and blueberry and tart cherry. Blue cheese too. Red wine is gone and it fades to raw and under ripened fruit. Full bodied, some tartness but reasonably low acid. Easy drinker. Almost inky mouthfeel.

--Keg at Ma Che Siete Venuti A FĂ , Rome. -- Deep burgundy colour, small pink head. Concentrated blackberry-like nose. Mildly citric with medium body and spritzy, rounded mouthfeel. Cantillon citric tartness countered by intense dark berries. Some stale hop bitterness. Part by part it is lovely, but the sum of the parts doesn't add up to that.

Pours a beautiful deep purple colour and a small pinkish head that quickly disappears. Aroma's: sour, sour berries, woody, light funky. Retronasal: fruity, sour, honey-ish, light funk. Flavour is sour, tart, dry, berry skin. Light bodied. Finishes slightly dry, tart, even a little bitterness.
