For the past two years, we've been making a fruited blend with Camerise in small quantities. Also known as haskap or blue honeysuckle, these berries are slightly sweet with a beautiful acidity.
The beer's color is a deep, deep red. It's powerful and very fruit-forward, but still maintains a nice, mellow balance between acidity and astringency.
We didn't have to look very far for a its new name... a blue fruit that makes a blood-red beer: Sang Bleu. Our friend Ammo has outdone himself once again, creating a superb new label to go with its new name.
Maceration of 2-year old lambic with blue honeysuckle.

Draft, Dageraad. Purple and opaque, frothy head, medium acidity, medium body, soft berry fruit. Off dry, minimal bugs, so it seems not super complex.

Bottle, 6%, bottled 19 January 2023. Color: Clear dark red, pink head. Aroma: Sweetish blueberry, subtle funky. Taste: Very fruity mix of flavors of blueberry and some blackberry and strawberry, hints of raspberry, subtle funky, some oak wood, minerals and hay. Light to moderate sweetness, light tartness. Some subtle bitterness at the finish. Dry-ish and vinuous mouthfeel. Soft carbonation. Very nice.
