750mL bottle, 2022 cork, Ma Che 5/14/24. Beautiful color. Glowing rose-tinted peach-golden. No head. Clear. Nose is very funky, lots of heavy mineral from grape and culture. Round acid on the end. Very grape-forward, though there is some lambic asserting itself, or trying to. Wow, this is kind of sweet. Maybe the least acidic Cantillon I've ever had. So much grape, not so much lambic. The grapes is killer of course, juicy, mineral rich, rich and soft, no aggressive tannin. But yeah, somehow the lambic itself is lost a bit here.

Taster from 0,75l bottle at Carnivale Brett, Amsterdam. yellow hazy color, small white head. smells bit smoky, flowery, subtle tannins, white grapes, subtle funk. Nice to very nice smell. full body, soft carbonation. tastes white wine, flowery, honey, earthy, grassy, light oak, subtle smoke. finishes lightly dry and lightly sour with notes of flowers, honey and white wine notes. Very nice one, great balance, almost a bit on the sweet side

Clear rosé coloured beer, with a reddish orange shine to it, small creamy white head, stable, non adhesive. Aroma: raspberries, strawberry jam, a bit herbal, sweet impression, citrus notes. MF: ok carbon, medium body. Taste: bitter start, fruity touch, very bitter, wood notes, tannins, grape peel, lots of orange peel as well, nice acidity, tannins, ok but not great. Aftertaste: dry, spicy, earthy, a little bitter, fruity, citrus notes, more grapes, spicy finish, good beer.

Bottle enjoyed at Cantillon. Light amber pour with no real head. Musty kinda moldy bouquet. Whoa, that’s a trip. It’s like I’m actually drinking a moldy, acidic, sour lemon concoction. It has carbonation and most definitely an insane amount of dankness. The amphoras must be really old and probably grotesque. Not my jam. Average body and mouthfeel.

New amphora-aged grape lambic by the world’s great grape lambic pioneer and specialist – but made entirely with pomace (‘marc’) instead of full grapes, i.e. the dry residue that remains after all its wine-to-be juice has been pressed out. Pale pinkish white, medium thick, open, moussy head, lightly hazy salmon pink robe with cognac-like glow, misty with sediment. Odd but interesting aroma of ice pop and frozen yoghurt, strawberry sherbet (!), a hint of rotting Camembert which fortunately vanishes completely in a matter of instants, stale old (oxidized) grape juice, freshly cut hogweed stems, pumice, unripe hard banana and green banana peel, rhubarb. Unusual but not unpleasant fruitiness in the onset: again hard green bananas, frozen blueberries, grape skins; fizzy carb, soft sourness and lots of amphora minerality (pumice) running underneath. The green banana effect remains persistent through a slender, bit vinous body, adding further ‘greenness’ of fresh nettles in spring and Granny Smith apple. Lactic yoghurty tartness gets accentuated by the astringency of the pomace, hard green fruit remaining the main association here; wood and grape skin tannins add further astringency, but the whole remains vinous and smooth enough to maintain a high degree of drinkability. Not nearly as juicy and vinous as other Cantillon grape lambics due to the use of pomace alone, but very distinct and fascinating, if in a rather inaccessible way; takes time to get used to, so do not judge from one sip alone – a general rule of thumb in beer tasting, but hardly ever more true than for this odd creation.

Bouteille 75cl partagée avec Wim et Vincent au Moeder Lambic Original. Bottled 24/03/2022. Encore une petite pépite à 45€, pour la bonne cause et une fois l'an, mais le prix ne laisse pas indifférent sur la qualité attendue. Ici, un projet de Cantillon en route depuis des années dont les fameuses amphores - dont j'ai un souvenir mitigé de la Quintessence 2012. Je pensais le projet abandonné.
Couleur rosée présentant un léger voile, le col est fin rosé.
Arôme est de suite envoyé sur des notes rappelant presque un vieux brie ou la croûte de fromage - ou peut-être lié au marc, à cela une sensation olfactive de soufre avec ce côté 'prout' qui est assez rebutant au début mais qui s'estompe après une bonne dizaine de minutes à l'air. En retrait, un bouquet fruité prend le relais et offre un bouquet en rétro-nasal qui oscille vers le sorbet à la rhubarbe et fruits des bois.
Palais met en avant le cépage Trousseau - assez réputé dans la région du Jura dont dans la production du Macvin (ici, un rappel à l'excellente version de chez Minne mais dans un autre style). Le côté funk et minéral de l'amphore est plus présent, garde un côté fruité vert pas encore mûre, le tout est plus plat en bouche avec un fini râpeux. A cela s'ajoute une fine couche fruitée rappelant les baies et fruits rouges, fruits des bois où s'entremêle l'acidité des lambics.
