No, it’s not a New York deli sandwich! It started with an idea adapted from the traditional Finnish Sahti beer, with its characteristic juniper flavour. . . . but then married with noble hop varieties.

Cask at Craft Beer Co, London on 20th April 2012. Golden amber with lasting head and initial lacing. Spicy and malty aroma with pepper notes. Rich in-mouth taste with grapefruit, strong bitterness, black bread and spices. Fruity ciotric peppery and very bitter finish. Slightly oily mouthfeel and full body.

(Cask at Craft Beer Co, Clerkenwell, London, 18 April 2012) Golden colour with foamy, off-white head. Malty, fruity nose with notes of almonds, lemon, grapefruit, honey and hints of juniper berries. Malty, fruity taste with citrus, apricots, grass, bread and a generous citrussy bitterness in the finish. Medium body, slightly sweet. A lot more Dark Star character than sahti character in my opinion. But quite a nice and interesting beer.

Cask at CBC, London. Pours clear, shiney gold with a bubbly, white foam head. Some berries, toast, leaves and pine in the nose. Flavor is quite sweet with a quick, earthy, citrus rindy bitterness that sweeps right in. Further bitterness of grass and pine. Mild spicy rye and dark toast. Medium bodied with fine carbonation. Slightly sticky to finish, with earthy hops, toast, toasty leaves, fresh grainy rye and pine. Nice beer.

Cask gravity at Planet Thanet Bf 2012. Clear mid gold lasting white head. Thats quite tasty rye spicyness decent hop on finish. Yes spicy hoppy finish some juniper decent

Craft Beer. Clear gold beer, tidy white head. Smooth semi dry palate. Mild rye spice. Seems to have a fair bit of hop in this (for a Sahti). The Juiper comes in towards the end and is quite mild. I like the contrast of rye spice and juniper sweetness at the finish. Another nice Dark Star experiment.

Cask at the Evening Star, Brighton. It pours clear golden yellow, with a decent white head. The nose is floral, lemon, dough, hay and pepper. The taste is peppery juniper, floral, hay, straw, resin, wood and lemon, with a long, dry resinous finish. Medium body and soft carbonation. Interesting stuff, I actually quite liked it!

Cask. Frothy white fair mostly deminishing head. Yellow colour. Moderate malty and hoppy aroma. Some spicey notes. Heavy bitter flavor. Long heavy bitter finish. Creamy palate.

Tap @ Craft Beer, London. Nice head with good duration. Color is golden. Aroma and taste are fruits, grass, malt, juniper and hops. Full bodied and soft carbonated.
