Ingredients: Hill Country Well Water, Malted Barley, Dark Candi Syrup, Truffle Honey, Hops, Coriander, Black Peppercorns, Mixed Culture of Brewers Yeast and Native Yeast and Bacteria

Notes: Fantôme Del Rey was first brewed together with legendary Belgian brewer Dany Prignon inside the fabled walls of Brasserie Fantôme in Soy, Belgium in 2014 from a recipe that Dany and Jester King Head Brewer Garrett Crowell had developed together. Now it has taken root at Jester King, transforming the recipe through extended fermentation and partial barrel aging with our own unique mixed culture of brewer's yeast, native yeast, and souring bacteria. Unfiltered, unpasteurized, and 100% bottle-conditioned.

On tap at Bottleworks, pours a hazy bright golden with a small white head. Aroma reveals fermented out honey, complex rustic farmhouse notes, and a touch of spiciness. Flavour has plenty of honey — only moderately fermented out — with farmhouse notes, some spiciness that's rather buried, and residual honey sugars. It's alright—a bit muddled.

750mL bottled 3/22/17, drunk 12/9/17.
Lightly hazy, tangerine-honey colored body is well-carbonated. Small off-white head sits at cover/ring.
Smells like a lot of apple and white pepper, with a good bit of clove and a whole bunch of other random phenols. Kind of musty, funky, though not necessarily in a good way. Moderate lactic character and some cereal grains behind it. I don't know, it just doesn't seem to have any focus.
In the mouth it's got a bit of honey-like sweetness, lots of carbonation and a slick-to-oily texture with moderate wood tannin. Dry, of course, and with tons of apple, white pepper and clove on the finish. I love dry, funky Belgian beers and spices and herbs more than the next guy, but this just seems strange for the sake of being strange. Very unfocused. Not sure what they were going for here. My distaste of Fantome continues...

750 ml bottle, thanks to ClarkVV, I Guess? Aromas is funk, tart, funky apricots skins, musty basement notes. Flavor is lemon rind, old malt, acid. The finish is old citrus peel, dry hay stacks and a mild acidic hint. Ummmm, not for me at all.

Poured from bottle March 2016 thanks ClarkVV golden pour with a nice white head. Aromas of honey yeast spices tart citrus. Taste is tart citrus honey spices yeast.

750 ml bottle into signature tulip glass; Blend #1, bottled on 3/22/2016. Pours slightly hazy deep golden amber/light orange color with a 1-2 finger dense and rocky off white head with amazing retention, that reduces to a nice cap that lasts. Thick soapy lacing clings down the glass, with a moderate amount of streaming carbonation retaining the cap. Fantastic appearance. Aromas of big lightly tart lemon, lime, peach, orange, pear, pineapple, apricot, plum, strawberry, melon, red apple, white grape, citrus peel, coriander, peppercorn, oak, hay, straw, grass, wheat, honey, candi sugar, and white bread dough; with lighter notes of leathery/musty funk, slight white wine vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy/light acidic yeast, spices, honey, oak, and bready malt notes; with great strength. Taste of big lightly tart lemon, lime, peach, orange, pear, pineapple, apricot, plum, strawberry, melon, red apple, white grape, citrus peel, coriander, peppercorn, oak, hay, straw, grass, wheat, honey, candi sugar, and white bread dough; with lighter notes of leathery/musty funk, slight white wine vinegar, and yeast/oak earthiness. Light-moderate peppery yeast/oak spiciness; light lactic tartness, wheat tang, and spice bitterness on the finish. Lingering notes of tart lemon, lime, peach, orange, pear, pineapple, apricot, plum, strawberry, melon, red apple, white grape, citrus peel, coriander, peppercorn, oak, hay, straw, grass, wheat, honey, candi sugar, white bread dough, light leather/funk/vinegar, and yeast/oak earthiness on the finish for a while. Fantastic complexity, robustness, and balance of fruity/funky/spicy/light acidic yeast, spices, honey, oak, and bready malt flavors; with an awesome malt/tart/bitter/spiciness balance, and zero puckering/astringent flavors after the finish. Lightly increasing dryness from tart/bitter/spiciness. Medium carbonation and medium-plus body; with a very smooth, creamy/bready/grainy, and fairly acidic/sticky/tangy/tannic balanced mouthfeel that is great. Alcohol is well hidden; a slightly increasing warmth of 8.8% after the finish. Overall this is fantastic wild saison! All around outstanding complexity, robustness, and balance of fruity/funky/spicy/light acidic yeast, spices, honey, oak, and bready malt flavors; very smooth and easy to drink for the ABV, with the mellowly spicy/lactic/tannic/drying finish. Awesome mix of classic JK house funk along with Fantome character; perfectly balanced spices/malts, with nice oak barrel presence. The Brett complexity is absolutely wonderful, and extremely intense on stone fruit/tropical notes. A highly enjoyable offering, and spot on style example as expected.

Bottle 750ml. @ Himmeriget, Aaboulevard 27, Copenhagen, Denmark 1960. [ As Jester King / Fantome Del Rey ].Unclear medium orange colour with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, pale malt, wheat, moderate yeasty, honey, coriander, light funky. Flavor is moderate sweet and light acidic with a long duration, wheat, honey, coriander, spicy, grapes, pale malt, yeast - funky. Body is medium, texture is oily to watery, carbonation is soft. Poured from a 750 ml bottle. Aroma has notes of candi sugar and honey. Some medium light peppercorn notes with some coriander and floral notes. Light overripe stone fruit and pear with faint hints of citrus. A touch of oak as well. Pours a hazy, dull, copper color with a medium large, thick, white head that recedes steadily to a thin film that lingers. Moderately high lacing and small legs. Flavor is moderately sweet with a light acidity that gets a bit more pronounced as it lingers in the finish. Moderate bitterness with a bit of an odd bite. Medium light honey notes with a bit of candi sugar. Moderate peppercorn notes with some lighter coriander. Light floral notes with hints of stone fruit, pear, red apple and citrus. Light oak notes. Mouthfeel is medium bodied with medium carbonation. Low astringency and low, but present alcohol warmth. Overall, an interesting, unique beer, but not an amazing one. The honey clashes a bit with the phenolics. The phenolics are nice though as are the fruity and floral esters. Just the right amount of acidity.

750 ml bottle. Nose of candi sugar, honey, fungus, coriander, Belgian yeastiness, estery, some hay. Pretty orange-amber color. Peppery flavor, almost burning, tart, with a dry finish. Very spicy and a bit funky. Strange but fun.

Bottle @ Himmeriget. Hazy amber with small off-white head. Aroma is malt, fruit, baking yeast, lemon and brett. Flavour is malt, baking yeast, grapes, fruit peel, warming, sweet, little sour and a little acid.
