As a Saison, this is as old school as they get. Lightly sour, brewed only with grain and hops made right here! Brewed for before, meanwhile and after hard labour on the fields!

New Flemish saison served from 75 cl bottles at Tim Webb’s masterclass at De Prael during Carnivale Brettanomyces. Loose, off-white, unstable head, colour misty straw blonde. Aroma of cider, wheat, faint touch of rancid butter but not too disturbing, grass, pear, green apple, grains (the spelt, perhaps); fruity, crisp onset, pear and quite a lot of green apple (acetaldehyde), medium to lightly spritzy carbo, grainy sourishness (clear wheat and spelt indeed) with a drying finish revealing grassy hops, gently bittering, a light lemony acidity and some spicy yeastiness; somewhat oily mouthfeel. Credible as a farmhouse ale, but taking Dupont as a standard, this still needs more finetuning. I guess the light acidity is purely bacterial here, there are no traces of Brett ’leatheriness’.

75 cl bottle @ Sankt Hans Tasting, Ulfborg. 27.05.2016 Aroma has soapy citron, some apricot and fruity hops. Flavour has soapy citrus, some menthol and grassy hops. Rather hoppy saison - and high on CO2.
