Previously 99|01 - EXPERIMENTAL - SAISON, this beer was our entry into the Roux Brew competition, 2014. Brewed with Seville orange zest and hibiscus and chamomile flowers, this rose-tinted beer is as smooth and complex as a good white wine.

On tap at In de Wildeman. Hazy bright yellow colour, white head. Aroma of a classic saison, yeast, flowers, pale malts, some sludge/soil, light hoppy. Flavour is medium sweet, yeasty, floral, dry, earthy, malty, nice floral bitter finish. Light to medium bodied. Good.

Bottle picked up at the brewery. It pours hazy pale gold with a decent white head. The nose is straw, dough, spice, ripe banana and hay. The taste is crisp, bitter, banana, tart citrus, straw, spice, wood, soda bread and earth with a crisp, bitter finish. Medium body, fine crisp carbonation and foamy mouth-feel. Clean, balanced and very drinkable. Nice work.

Hazy paleish gold beer, tidy white head. Palate is crispy and a little dry. Very light dry spice. Mild tangy herbs. Whisper of citrus fruits. Dry seltzer. Light dry finish. Mild bitter linger. Yep classic - or standard depending on your viewpoint. Mines the latter but this one has been done well.

Bottle at home in London - picked up at the brewery. Pours hazy, pale yellow with a crisp, frothy white head. Lovely aroma of tangy lemon, flaked wheat, straw and biscuits. Light sweet flavor with further citrusy, lemony tang, some lightly bitter grass and hay, dry wheat, light acidity. Light bodied with average carbonation. Finishes with mild sweetness and a clean, dry edge, some flinty stones, mellow doughy wheat bread, more biscuits, slight citrus rind bitterness, faint tart lemon notes, hints of lime zest. Quick and refreshing on the palate. Exceptionally drinkable and quenching. Wonderful.

10am breakfast beer at the brewery, keg, 28/06/14. Very lightly hazed golden yellow with a decent white cap that stays to make your acquainence. Nose is big lemon rind, bitter citrics, spice, corriander, orange pith. Taste comprises lemon rind, farmyard funk, earthy, grass laden, light bread dough, apricot. Medium bodied, fine carbonation, crisp clean close. Solid saison, in the ’classic’ mould as the name implies.

Bottle from brewery and drunk at home. Hazy pale gold lasting thick white head. Straight up lemony saison funky aroma. The lemon is lovely with an underlying funky yeast flavour. Then a dry finish with a bit of hop sting. It’s a classic saison as it says on the label with a fresh lemon curd flavour. Lots of saisons have been made in London in the past 18 months, but I think this is one of the best. Happily drink this over and over. Very good. Still not quite authentic Belgian funk but certainly getting there.
