In May 2020 we produced a pale, extra strong wort from barley and wheat malts. The mash was rested for 3 hours and dextrose sugar added to the boil. This produced a more fermentable wort, leading to a stronger and drier beer. Aged hops were added during a long boil before the wort underwent a vigorous primary fermentation in our coolship with only wild yeast and bacteria. The resulting young beer was then matured in two first use bourbon barrels for 25 months before bottle conditioning.

Panda thanks to Cloin: Poured an unclear golden with a white bubble head. Aroma is pungent, wild, fruity, vinegary. Taste is tart tangy fruit, light citrus, lemon, woodsy, oak, sour through to the finish.

Bottle shared at CBJ - cheers to Dave. Pours lightly unclear with a creamy, white head. Medium sweet flavour with notes of tang and ripening citrus, bit of booze. Full bodied with fine, massaging carbonation. Warming finish. Very tasty.

Craft Beer Junction bottleshare, thanks to someone! Hazy gold beer, good pale cream colour head. Airy palate, semi dry, decent fine carbonation. Airy pale malts, a good creamy sweetness. Decent citrus, a mild winey vibe. Modest pine. Light and semi finish.

Moderately hazed orange to light amber topped with an off white cap that thins to the edge.
Nose is vinous, bourbon nip, light dry rot, stewed fruits, funk.
Taste comprises tangy fruit rinds, bourbon bite, bretty pangs, damp straw, spice, barnyard nip.
Medium bodied, fine carbonation, semi drying close with a balanced puckering edge.
Solid complex sour.

Bottle, 750 ml, shared with Boris and Brada. Cloudy orange with small white head. Malty, sweet, fruity, even juicy, some oak, funk, bourbon. Quite complex.

Bottle from the brewery online shop. Pours light hazed gold with a white cap. Aroma: sweet malts, bourbon barrel, oak, funk. Taste: rich, light sharp, tangy, ripe apple, bourbon barrel, soft funk, warming finish. Medium body with soft carbonation. Another fine ST iteration.

Bottle. Mills online. Light haze on a medium gold. Sturdy white froth lasts throughout. Nicely leggy. Not sure where to start. Sweet and tangy. Whiff of smoky bourbon. Ridiculously easy drinking. Sharp tart tangy and sweet. Silky mouthfeel. It’s one of those that you can’t put down. Stellar.
