We added wild yeast to a portion of our Saison and aged it for three months. When there was no sugar left for the Brett to devour, we bottled it and let the funky character develop for another six months.

Hazy yellow white head, creamy head. smells like lime juice and honey. peppery flavor with syrup and weak tangering juice and water. clean and still very nice to drink.

4 oz draft, Copenhagen Brewfest, Boston. Cloudy golden color, good carbonation. Aroma mild citrus, straw, grain with light traces of Brettanomyces.

Flavor shows citrus notes upfront with a barnyard note in the center. Light grassy hints with a straw finish. The body is lighter with a bone dry texture. Body is lighter side of medium. Got to say, I rather liked this and wish I could have had a larger sample. Nice job!

Nice creamy mediumlasting head. Aroma is slightly dry sour-ish, old citrus peel, sour grass, minerals, flowers, soda powder, lemon, hay, weeds, oak, mild brett, hints of vinegar. Taste is slightly dry sour-ish floral, old orange peel, yeast, minerals, flowers, wet hay, wet grass, mild brett, weeds, sorrel, bark, lemon, leafs. Medium bitterness, slightly harsh and watery mouthfeel. Fair enough.

Brett saison from a 75 cl bottle at In De Wildeman during Carnivale Brettanomyces. Moussy and stable, off-white head, hazy golden blonde colour with peachy hue. Promising aroma of orange sorbet, buttermilk, apricot, sherry, pineapple, leather, green apple peel, bitter honey, white pepper, blood orange; crisp and estery onset, sour berries, unripe pear and citrus peel, medium carbo with a bready maltiness, only very briefly sweetish but then drying a lot due to the Brett, with a hayish and sherryish effect, funky horseblanket, grassy as well as deeply bittering, leafy hop bitterness and agreeably warming, gin-like alcohol. Great and complex saison.

Bottle, thanks to Leighton at the Tuesday Horal Chugging Tasting. It pours hazy gold with a thick white head. The nose is hay, earthy, brett, mouldy, dank and Gorgonzola cheese. The taste is straw, hay, citrus, soapy, grass, pepper, white grape, brett, blue cheese and musty/dankness with a dry, earthy finish. Medium body and fine, foamy carbonation. Decent, but too much mouldy/blue cheese aspect for me!

Craft Clerkenwell, Tuesday Horal Chugging Tasting, bottle thanks to Leighton, 17/09/13. Lightly hazed pale golden with a moderatley sized off white head. Nose is lemon rind, grass, tarte fruit, brett, orange pith. Taste comprises lemon rind, tangerine, grass, soured grapes, tarte peaches, bretty notes. Medium bodied, over carbonated - too much spritz going off, dry finish. Nice stuff but the over cooked carbonation lets it down a little.

Craft Clerkenwell. Tuesday Horal Chugging Tasting! BBN Whale! Thanks Leighton! Lightly hazy pale gold beer, good white head. Palate is very light and super airy. Fine carbonation. Light floral brett. Light orange and a little pith. Light finish. Not bad!

Bottle 330ml.Unclear medium orange colour with a small to average, frothy, fair lacing, mostly diminishing, off-white to white head. Aroma is moderate malty, toasted - caramel, moderate yeasty, citrus, tart, brett, yeast, barnyard notes. Flavour is moderate to light heavy sweet and light light acidic with a average duration, dry, citrus tart, fresh. Body is medium, texture is oily to watery, carbonation is soft. [20121203]

Bottle shared at Craft Beer Co. - Clerkenwell, London. Pours clear, red-gold with a fine, white cream head. Big funky nose, light manure. Light to medium sweet flavor with lots of funk, moderate berries, bread. Light to medium bodied with fine to average carbonation. Clean finish with more manure (paradoxically), light berries and further bready malts. Decent, although I like the regular saison more.

Bbno 13 01 brett aged saison 5.3%. Hazy orange gold. Bretty no doubt. Some sour notes. A decent pretty sour pale ale. I liked it best so far. 3.6/5 bottle at Craft Beer Co
