Bottle shared in London - sourced from the brewery. Pours hazy gold with a creamy, white head. Classic HF saison nose, moderate funk, tangy citrus, tangerine, melon, a little zesty citrus. Light sweet flavour with moderate citric tang, tangerine, nips of lime, wheat, understated funk. Light bodied with average, massaging carbonation. Great balance in the finish, with further funk, citrus, melon, tangerine, light bitter hay. Exceedingly drinkable. Outstanding.

Bottle shared on Level 42 19/12/2016. Huge thanks to Leighton for this one. A translucent golden orange coloured pour with a frorhy white head. Aroma is nice saison yeast, orange, apricot, hint of brett. Orange rind. Palate is frorhy, highish carbonation, . Flavour is composed of tangy sour, pineapple, lemon, straw, apricot, little white grape. Lovely. .

Bottled 4/7/16, drunk 10/6/16.
Mountains of off-white head top a minimally hazy, golden-brass body with tons of carbonation visible. Strong retention as with nearly all of Shaun’s Belgian beers.
Lime is certainly evident in the nose but after six months in the bottle, it seems to be melding with the citrusy notes from the yeast and doesn’t dominate. Lovely mineral character, as with all of his farmstead beers and a grainy, crackery malt that adds some brightness and complexity to the nose. Soft honey, lilac, lime, vanilla and a gentle dose of salinity all linger nicely on the end. No alcohol or flaw.
Tart, in the flavor, though not incredibly so and the lime zest doesn’t exacerbate this, adding a zippy citrus element that is more juicy than anything. Black pepper mixes with grainy, lightly bready malts and yet the soft oats are able to comfort the palate just fine, in concert with the fine, engaging carbonation. Supple, yet dry, as it should be, with a gentle but enjoyable salinity that plays perfect foil to the acidity. Rich minerality, light honey and salt linger with plentiful lime notes as well. Despite it not being obnoxious or overdone, I’d still like the lime character dialed back somewhat. Otherwise another splendid farmstead ale.

Wave end of the keg at FoFa. Light gold with a big thick head and a wheat/pickle aroma, round carbonation and light bodied. Acidic and sour berry flavor , a nice beer but maybe too acidic but then again I may have suffered from palate fatigue. My main takeaway was another win from Hill Farmstead.

750 ml bottle. Thanks Adrien W. Gorgeous full foamy white head on a hazy bright yellow liquid. Aroma is great yeast character with subtle lime zest and wheat.

The lime is very obvious in the flavor but never overwhelms the palate. Juicy lime texture with a medium chewy body. Salt comes in at the finish but again not overdone. I am amazed at how balanced it is for having so much lime. Very tasty and super drinkable.

Bottle. Pours a cloudy yellow orange with medium frothy white head that lasts. The aroma is lime zest, funk, oak, sea salt. Medium body, similar flavors to nose, light tartness, very nice.

Tasting at Matt’s
Hazy blond color, bright sunlight. The aroma combines spices, grapes (white grapes), biscuits; very nice. Dry mouthfeel; also quite astringent, woody; with strong lime flavor, some spices; refreshing, but I don’t think the combination of lime and Saison works best.

750ml bottle at Matt’s. Pours a cloudy blonde with a white head. Aroma is bretts, lots of lime, slightly salty. Taste is pretty the same. But too much lime. Interesting though.

750mL bottle, sent from yourilevesque (thanks a lot, Youri!), pours a hazy golden with a medium white head. Aroma brings out lots of lime zest upfront, along with salt, and citrus. Flavour is dominated by spritzy, crisp lime zest upfront, with tons of salt, and a citric finish. For what this is, I wouldn't normally expect much, but HF manages to do it well. Crisp, bright and complex. Excellent.
