Description
Welsh Mountain Cider is a family run Ciderworks, apple and pear orchard, tree nursery and smallholding in the Cambrian Mountains of Mid-Wales, UK.

Chava and Bill have worked together for the last 12 years turning a 1115 feet high, six acre plot into Britain's highest altitude Ciderworks, fruit tree nursery and museum orchard. In this time Chava and Bill have planted trees, grafted and sent out hundreds of acres of new orchards, made thousands of litres of amazing cider, grown food, made music and art and brought two delightful girls into the world.

Our cider is made from carefully selected varieties of sweet, bittersweet and sharp apples, which are pressed and allowed to naturally ferment slowly over the winter with their own natural yeasts.

The cider is left to mature for between 6 months and two years, and is then bottled unfiltered and unpasteurized, and without added sulphites.

We cellar age our live cider in the bottle for anywhere between 6 months and 10 years where it continues to mature in the bottle, producing a complex bouquet and rich flavours you would expect from a truly great expression of our native wine.

750ml bottle from Aeble. Slightly hazed golden colour, afew short-lived bubbles on top and aroma of apple, funk. Taste is tart, tangy, apple, fleshy, with barnyard funk, some citric acidity and earthy tannin. Medium bodied, low carbonation, dry tart & tannic finish. Nicely drinkable.

750ml bottle from Aeble. Hazed orangey colour, short-lived bubbly head and aroma of apple, fruit, funk. Taste is sweetish and tart, tangy, appley, bright fruity, citric note, some flesh & skin, alittle funk, caramel hints, with acidity and earthy tannins. Medium bodied, light carbonation, dry tannic finish. Nicely drinkable.

75cl bottle from Wilderness Brewery, supped watching Hamlet at Shrewsbury Castle. Pours a mucky brown, mild natural carbonation. Aroma of raw, earthy, woody, natural apple mush and morning orchard flora. Flavour profile presents a woody, wild, complex natural depth with leafy, mushy fresh-pressed apple pomace. Very enticing blend.

750ml bottle from Cat in the Glass. Foam over on opening. Hazy orange colour, fizzy white foamy head that quickly collapses, and aroma of apple, funk, earthy. Taste is tangy & tart, juicy, sweetish, ripe apple, with orange, stone fruits, caramel, funk hint and drying bittersweet tannins. Medium bodied, spritzy carbonation, dry zingy tart & tannic finish. Nicely balanced, very drinkable.

Taste is tangy, tart, apple, earthy, funky, some leathery hints, grassy, with alittle acidity and drying tannin. Medium bodied, low carbonation, dry tannic finish. Nicely drinkable.

Taste is sweet, apple, fruity, orchard floor, leathery, funky, with drying earthy tannins. Medium bodied, low carbonation, dry tannic finish. Nicely drinkable.
