Chava and Bill have worked together for the last 12 years turning a 1115 feet high, six acre plot into Britain's highest altitude Ciderworks, fruit tree nursery and museum orchard. In this time Chava and Bill have planted trees, grafted and sent out hundreds of acres of new orchards, made thousands of litres of amazing cider, grown food, made music and art and brought two delightful girls into the world.
Our cider is made from carefully selected varieties of sweet, bittersweet and sharp apples, which are pressed and allowed to naturally ferment slowly over the winter with their own natural yeasts.
The cider is left to mature for between 6 months and two years, and is then bottled unfiltered and unpasteurized, and without added sulphites.
We cellar age our live cider in the bottle for anywhere between 6 months and 10 years where it continues to mature in the bottle, producing a complex bouquet and rich flavours you would expect from a truly great expression of our native wine.

750ml bottle from Welsh Mountain Cider. Hazed pale yellow colour, short-lived thin white head and aroma of apple, fruity, fleshy. Taste is tart, apple, tangy, fruity, alittle core & skin, with some citric acidity and tannins. Light to medium bodied, low carbonation, drying finish. Quite drinkable.

75cl bottle shared with Soph at Shrewsbury Castle listening to Shrewsbury Symphony Orchestra. Hazed gold appearance. Rustic orchard aroma. Taste presents a rustic, earthy blend, good tannic presence, wild funk with a natural fruitiness some pippy core notes but nice depth overall. Good stuff.

Taste is sweetish, apple, fruity, tangy, tart, acidic, with meaty, leathery funk, and drying earthy bittersharp tannins. Medium bodied, light carbonation, dry tart & tannic finish. Nicely drinkable.

75cl bottle from Spar, Llanfyllin. Pours a misty gold, enthusiastic bubbles rising to the top. Mild natural apple orchard aroma. Fine spritz, crisp with very much a wild woody feel, quite dry with little sweetness coming through. Decent natural cider but more fruitiness would've been welcome.

75cl bottle from Spar, Llanfyllin. Hazed golden orange appearance. Seems to have a smoother, more harmonious flavour profile than what I remember from ten years ago which tended to be more acetic and barrel-influenced. Good natural fruitiness, decent redstreak showcase with a soft tannic grip, gentle carbonation. Enjoyable natural cider.
