In February 2022 we moved the brewery from our small unit in Penperlleni in to a larger, more dynamic space in the heart of Cardiff city centre. The move enables us to brew in larger quantities, and with the aid of some brand new equipment, hone in on our brewing processes to drive the quality of our beers forward!
In the same month, we opened our flagship taproom at the same venue as the brewery, meaning that we now have the perfect spot to deliver our beers at their freshest and tastiest!we are brewing on a modest 6bbl kit with 6 fermentation vessels. With Alexis leading the brew exploration, the team remains small and close knit each pitching in to help the other.
Mad Dog Brewery strives to produce an eclectic range of top quality, exciting beers from sour pales to hefty imperial stouts and everything in between. Utilising our fantastic Welsh water and the very best ingredients, we are able to
produce beers of outstanding quality to satisfy even the most adventurous and inquisitive beer aficionado.

Cardiff Mini-break Beer#39. Extremely dark amber-red in colour. Its roasted character is very good in aroma. It's lost somewhat in a too easy carbonated taste, although it remains tasty nevertheless with sweetish notes in a similar respect. A re-rate as I've previously had a cask version.

Cardiff Mini-break Beer#38. Very mildly hazed dark amber-red, with a bit more of a red ale taste than mild for me given its prominent sweetness. This also elevates the ales taste above its low mild strength, so it doesn't feel thin or weak at all. Has a small sticky-sweet texture.

Cardiff Mini-break Beer#37. Golden-red in colour, not a colour I usually describe. It's a very sessionable red too, mildly sweet in its hop balance with a bit of carbonation impacting too.

Cardiff Mini-break Beer#36. A second night of tray beers at Mad Dog starting on the lightest first, a marmalade session IPA. A very light jam-esque sweetness exemplies this and it's enough to help confirm its name. It's a pretty decent session ale even if you extract its name... probably in the golden ale sphere of beers too.

Cardiff Mini-break Beer#24. Hopped, what was chalked up as a brown ale, but to me is more suited as an American Red, which is glowing clear dark-amber in colour. There's some sugars involved in a slightly darker, or perhaps just grittier maltiness, although its hoppy influence is still dominant for me here. Regardless, it's sweet and good fun drinking.

Cardiff Mini-break Beer#23. My fifth at Mad Dog, brewed on site, a golden wheat ale. The banana aroma and flavour has been achieved in this one, and as it's the least carbonation-influenced so far, it allows a bit more flavour through. That said, there's certainly more flavoursome available than this. It has a very drinkable texture though.

Cardiff Mini-break Beer#22. Tray two begins. Very hazy, it looks like mango juice, smells like mango juice, and tastes like alcohol mango juice as its strength is noticeable, feeling citrus-spiced for it.

Cardiff Mini-break Beer#21. Last of the first tray, a hazy golden-amber coloured one. There's lots of tropical notes coupled with pine in aroma, the latter takes over in a sugary taste that's very positive.
