Description
We are a small scale company making cyder and perry following the heritage of traditional methods with a bit of 21st century know-how to ensure a quality product is created. We pick fruit from unsprayed orchards and do not press the fruit until we think it is fully ripe. My fruit is mainly sourced from Monmouthshire and Powys but I sometimes stray over the border into Herefordshire and Gloucestershire to get fruit for the blends I want. The cyder shed and equipment used to make the cyder has been largely made by myself and each year I reinvest in something new to enhance the cyder making process.

We only ferment freshly pressed apple/pear juice and rely on the naturally occurring yeasts from the fruit to create unique flavours. Our cyder and perry change from year to year. The beauty of craft cyder making is you never know what you are going to end up with. It is not like the industrially produced cider that is the same each year.

BIAB at Partizan Tavern. Pale golden colour, no head and aroma of light pear. Taste is mellow, pear, floral, fruity. Medium bodied, low carbonation, medium dry finish. Quite drinkable

BIAB at Nottingham Beer & Cider Festival 2021. Golden colour, no head and aroma of apple, oak barrel. Taste is sweetish, apple, fruity, with barrel notes and some drying tannin. Medium bodied, low carbonation, dry finish. Quite drinkable

500ml bottle from Scrattings. Golden colour, afew short-lived bubbles on top and aroma of apple, caramel hint. Taste is slightly tart, apple, pulpy, cooked apple, sweetish, caramel notes, with alitttle tannin. Medium bodied, light carbonation, medium-dry finish. Quite drinkable.

500ml bottle from Scrattings. 6.5% Pale yellow gold colour, white foam head that dissipates to a thin rim and aroma of perry pear, fruity. Taste is sweetish, tangy, perry pear, some tartness, solventy funk, and light mellow tannin. Medium bodied, low carbonation, dry finish. Quite drinkable.

Draught at No Sign Bar, Swansea. Hazy yellow gold colour, no head and aroma of soured pear, mucky. Taste is sharp solventy, ripe pear, sweet syrupy with barnyard, farmhouse notes. Syrupy mouthfeel, medium bodied, low carbonation, sweet finish with some solventy undertones. Nicely drinkable

BIAB at 2018 Welsh Perry & Cider Festival, Caldicot. Orangey gold colour, no head and mucky, apple aroma. Taste is tart, apple, bittersweet, fruity, earthy and dry tannic. Medium bodied, low carbonation, dry tannic finish. Quite drinkable.

Cask-conditioned, on gravity, at the Great Welsh Beer & Cider Festival, Cardiff 21/9/2017. Greenish gold in colour. Aroma of yeasty fruit, spice and elderflowers. Flavour was dry, with earthy fruits, more spice and a lingering, mouth puckering finish. Enjoyable.

Cask at the GBBF 2017. Day 5. 12/08/2017.�A clear golden orange coloured pour with no head. Aroma is, slightly soapy, sweaty apple, little solvent. Flavour is composed medium sweet, woody apple,. Palate is medium sweet slightly tangy, moderate carbonation, meh.

Bag in a box at Pigs Ear Festival 2016. Clear gold green colour. Vinegar film developer aroma. More vinegar on the finish. Some sourness. Ok . Sweet and dry at same time. Weird.
