Description
We are a small scale company making cyder and perry following the heritage of traditional methods with a bit of 21st century know-how to ensure a quality product is created. We pick fruit from unsprayed orchards and do not press the fruit until we think it is fully ripe. My fruit is mainly sourced from Monmouthshire and Powys but I sometimes stray over the border into Herefordshire and Gloucestershire to get fruit for the blends I want. The cyder shed and equipment used to make the cyder has been largely made by myself and each year I reinvest in something new to enhance the cyder making process.
We only ferment freshly pressed apple/pear juice and rely on the naturally occurring yeasts from the fruit to create unique flavours. Our cyder and perry change from year to year. The beauty of craft cyder making is you never know what you are going to end up with. It is not like the industrially produced cider that is the same each year.

BIAB at Nottingham Beer & Cider Festival 2025. Pale yellow gold colour, no head and aroma of perry pear, ripe fruit, floral citric. Taste is perry pear, elderflower, citrus, with some acidity. Medium bodied, low carbonation, drying ripe peary acidic finish. Quite drinkable

8/8/2025. From BIAB at GBBF 2025. Aroma starts with a little mucky/straw, with sweet apple, caramel, brown sugar and a funky edge. Fairly sweet with some drying tartness. Quite drinkable.

Bag-in-a-box at GBBF 25. Slightly opaque gold. Aroma is peel led. Pithy. Some stewed apple sweetness and a sour edge. Bitter. Sour. Fruity vinegar and tanin over a sweet underbelly. Light. Thin if sticky. Soft carbonation. Long dry somewhat astringent finish. Fine.

Draught at 6.8% from Post Office Vaults. Clear pale yellow. Aroma of fruity pear, peel, light funk. Taste is sweet, fruity pear with peel notes, tangy and somewhat yeasty in finish. Light to medium bodied. Not bad.

BIAB at Nottingham Beer & Cider Festival 2024. Yellowy golden colour, no head and aroma of pear, slight vegetal hint. Taste is sweetish, Perry pear, tart fruity, acetic funky, citric, with acidity and tannin hint. Medium bodied, low carbonation, medium peary acidic finish. Quite drinkable.

11/10/2024. From BIAB at Nottingham Beer & Cider Festival 2024. Pours clear pale gold with minimal head. Aroma is perry pear, mucky, woodchip, funky. Moderate sweetness, light tartness. Medium body, oily, low carbonation. Sweet drying finish. Quite liked this.
