Cantillon ? That’s the time machine. You’ll leave the modern civilization, goodbye to the noise, goodbye to the world.
"But where are we ?", you will ask yourself.
Well, you are in a family brewery where Lambic, Gueuze, Faro and Kriek are made and where nothing has changed since 1900 when it was founded. The Van Roy-Cantillon family welcomes you and invites you to discover a fabulous world. Beers, tools and brewing process are still the same as in the beginning.
Red copper containers, barrels, some of them more than 100 years old, and walls of bottles constitute the scenery for your visit.
Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer. Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer.
Anyway, you’ll be able to taste a real traditional Gueuze-Lambic and if you would like to know more about the Kriek or the Framboise, just ask the brewer.

2001 vintage. Red-pink body which is quite clear, especially for a lambic-based product. There was a pink head when I poured it out, but it disappeared almost instantly. The aroma combines the sourness from the lambic whit the sweet fruitiness from the rasp-berries. The flavour is almost what the aroma predicts. Sourness combined with rasp-berries. Although, I find the lambic has a dominant role in the flavour in contrast of the Cantillon Rose de Gambrinus. The initial flavour is moderate sweet - sour, and it finishes stronger sweet and sour. Quite long-lasting finish. The beer is accompagnied by a fizzy mouthfeel.

A very red colour, like blood, quite foggy, a small pink head, at least very fast diminishing. Very pure cherry-aroma, but not very sweet, rather lambic-sour. I thought this was going to be a little bit to sweet, because of so many cherries, but fortunately it was a mistake: it begins sour-sweety and becomes sour-bitter. It is not very complex, but it is magnificent by it's simplicity.

Cloudy, rhubarb-red with no head. You can see the effervescent through the fog. Heroically cheesy aroma with vinous accents, must and leather. Sweet and vinous up front, quickly turning sour, barrelly, musty, leathery. The burgundy keeps up throughout the palate, lending it a lot of refreshing quality and style as that character really blends well with the acidity of the base lambic. That vinous sweetness and lush fruitiness might make this the most quaffable Cantillon out there. Very good lambic.

Copper colour with a thin tan head. Aroma of super sour raspberries with a nice sweetness. Medium-bodied; Very tart raspberry and grape taste with a nice potent sweetness. Aftertaste tart and mellow at the same time-very pleasing! Unfortunately, I ended up droppping this bottle and spilling a few centilitres on the ground...sorry for that everyone! I had this bottle at the Winter Party at Oakes' place in Toronto, Canada on 05-December-2003. I owe a large thank you to Hey_Kevin for sending this very expensive bottle up to the party for us to all sample.

Great orange (clear) colour with a thick dense white head. Aroma of cherries, tart raspberries, malt and a bit of spices. Medium to Light-bodied; Sour raspberry taste with a nice lasting sour quality. Aftertaste noticeably sour way after the last sip! Overall, a very nice Lambic-I thought it was a Flemish Sour when I was drinking it however. I split this twelve ounce bottle with Haddon90 (Phil) at R.F.D. in Washington on 28-November-2003.

[Mine said vintage 2000 on the bottle but 2002 on the cork??? - drunk November 2003] The aroma is fresh fruity - very much like a geueze should be. The color is orange and it has a fine head while pouring but then it disappears. The flavor is a fresh geueze flavor: fruit, acidity and a slight sourness turning a lot towards a sour grapefruit. A very nice geueze. Thanks a lot to Alex (fiulijn) for trading me this.

Blondn golden colour, without head. Typical lambic-aroma: sour, fruity ... Although it is called an unblended lambic, it is 'finished' in contrast of a young lambic. It has a little sour, little sweet fruit flavour. It is very pleasant drinkable.

Dark, brownish & purplish red; yoghurt-like pink head, surprisingly huge for kriek but dissipating all the same. Very fruity nose, sulphury and "horseblanket". Fruity is more complex than just 'cherries'; there's notes from the skins, the stones, the juice, as well as more exotic components as raspberry, plum, Japanese cherry, eau-de-vie de griottes, etc. Dry, tart fruittaste with lots of background flavour of wood, old oak and chestnutwood, cherryskins,... The acid onslaught is at the tongueedges; more fruity than lactic. The body of this beer seems to be made exclusively from fruit. There is an outspoken dry-out effect, which seems to make it creamy with all the fruit around. It ends a bit light. Superb fruitbeer, more fruit than beer.

Beer has the colour of dewy apricots; slim ring of big bubbles. Woody nose, sulphury, grapefruit or grapefruit peel. Tart taste, hint of malt all the same, lemony, sweet grapefruit, chardonnay and sultanas. Light bodied, but with hints of still fermentable sugars. Superb, delightfull lambik, ideal with its fruity tones for blending great things with.

Treble blond colour, whithout head. Sour, rotten aroma. Sour flavour, sweet in the end. Very special beer. Now I'm glad I spent so many money on it, (but not as many as in the USA), I payed 5 euro in the brewery.
