We are really proud that we do this by sourcing the majority of our ingredients from within the UK. Nothing is more local than the main ingredient: water which comes from our own spring at the Brewery. Locally sourced is both key to our brand story and it also means we can create very unique, premium tasting beers.
In terms of our production ethos - our team are dedicated to the business vision of "redefining english ales". It does mean that the Wincle Beer brand is more traditional than some in its styles; but that does not mean we don't like a bit of experimentation! We are fascinated by the use of new techniques to make each ingredient sing ... and a tweak here and there can make a phenomenal difference to the end product. We are also to be very proud to gypsy brew for a number of other brands - some of which are extremely modern in their presentation and taste; and very different to Wincle Beer. This passion for all things beer and knowledge of the process ensures we have the experience and the skill set to deliver any style of beer, ale or lager that meets the criteria and taste credentials required.
Each and every brew follows rigorous process with every beer leaving our brewery 'Character assured'. Over the last 12 years this means that we have created more than 5 million pints with that same zeal for quality on each and every one.

Bottle at home. Pours clear ruby brown, nose is smoky, roasted, toffee, caramel, taste is sweet toffee, chewy, some fruity berries, dry smoky finish.

Cask at Wickstead Arms, Nantwich. Pours a pale straw with a small white head and good lacing. The aroma has grains amd floral hops with a trace of citrus. In the mouth it is sweet, but with bitterness lurking beneath. Flavours are floral hops and lemon with traces of grapefruit and mango. Finish is slightly sweet, but dry as well. This is decent. More of a pale ale than a bitter though.

330ml bottle from Hartington Cheese Shop - Clear brown body, little head. Deep fruity nose, lots of plum, yeast, stone fruits, honey and dates in there. Nice rich bready taste, but very light in texture. I reckon this would be a right banger if they'd taken it that little bit further.

500ml bottle from Hartington Cheese Shop - Opaque black body, thick tan head. Nose is burnt coffee bean, lots of roasted notes. Taste is sharp and bitter, roasted malts, long burnt finish.

23/2/2022. Bottle from Raise The Bar, Chapel en le Frith. Pours clear bright amber bronze with a small creamy off-white head. Certanly looked the part. Aroma of toffee, bread, dried fruit, malt, a little honey and light buttery notes. Medium plus sweetness, moderate bitterness. Medium body, sticky texture, soft carbonation. Gently warming alcohol finish. Solid scoring barley wine, not a classic but certainly the best Wincle I've had.

Cask at the Smithfield, Derby crawl, 11/02/22. Deep amber topped with a good sized beige crown. Nose is dark malts, nutty, hint of smoked beechwood, dried fruits. Taste comprises dried fruit rinds, brown bread, whisper of smoke, toffee, dark malts. Medium bodied, soft carbonation, semi drying close. First mild in a while and a decent one to boot.
